Recipe: Vegetable Masala Sandwich

Vegetable Masala Sandwich is a toasted sandwich stuffed with a variety of spicy vegetables. Generally, these sandwiches are made in sandwich maker or toaster. This sandwich full of vegetables can be enjoyed as a snack. for breakfast or as a light dinner option with some salad or oven baked fries on the side.

Memories

My mum use to make these sandwiches not for breakfast but for dinner for all of us – 12 of us in total or 21 when my aunts and cousins would visit. Now multiply by 2 as that is the minimum all of us would eat. And at that time we didn’t have the electric sandwich maker but a gas sandwich toaster. We called it a sandwich chamcho in Gujarati. Chamcho is actually a big spoon. Weird name, but we all loved the sandwich. At that time the shape of the sandwich toaster was round. Nowadays we get the square one. My round one got rusted over time.

Denis And Vegetable Masala Sandwiches

Denis was  Namrata’s(my daughter’s) first friend in Bangalore when she started her textile design course at NIFT. We had just moved into a rented apartment near the college and the kitchen was not fully functional. Denis came home to help us settle in and the only thing I could make at that time were vegetable masala sandwiches. And of course we were dying to try out our new sandwich toaster. After helping us to set up furniture am sure Denis must have been famished. The number of sandwiches he went through with the famous Maggi sauce left me baffled. Whenever I make these sandwiches I remember him. So Denis this one is for you.

 

Present Time

Whenever I make these vegetable masala sandwiches in Magog, have to use the electric sandwich maker as the gas sandwich toaster doesn’t work on my induction stove. At the moment I am in Bangalore… so happy to use a gas stove. Made the sandwiches a couple of days ago and thought of sharing the recipe with the group Sunday Funday. Sometimes I make the sandwiches using the electric sandwich toaster  but they don’t taste the same as the ones made with gas sandwich toaster. I find in the latter I am able to stuff more vegetables which is better when you want the family, especially kids to eat more vegetables.

 

Sharing Vegetable Masala Sandwiches With Sunday Funday Group

This Sunday it is fresh ideas using vegetables. Vegetable Masala Sandwich for me is not exactly a fresh idea but more of a traditional one. Since I made the sandwiches a couple of days ago, using the “sandwich chamcho,” thought of updating an old post. I had posted the recip way back on 25/04/2012! Republishing it with better photos and write up.

Ingredients Required For Vegetable Masala Sandwiches

Bread

Any sandwich bread, white, brown, multigrain. But for this one I prefer white bread. Turns out more crunchier.

Butter

Salted butter to butter the bread slices.

Mixed Vegetables

I prefer using peas, carrots, sweet corn and potatoes for this recipe. Perhaps it is because I have grown up eating sandwiches made with these vegetables. Some add green beans, kidney beans, cauliflower, bell pepper, cabbage. I prefer my mum’s recipe.

Onion

Peel and dice a small onion. I like to use red onion for this recipe.

Fresh Ginger

Peel and minced or grated.

Green Chillis

Minced into a paste. Can add finely chopped chillis but not advisable if making the sandwich for kids.

Oil

Any oil of your choice. I prefer using sunflower oil.

Mustard Seeds

Known as rai, sarson ke dane.

Cumin Seeds

Jeera, jiru.

Asafoetida

Hing. Adds a unique flavour. But it is an optional ingredient.

Red Chilli Powder

I don’t add any of the green chillis are a bit hot. I add only when the green chillis are mild.

Turmeric Powder

Haldi, hardar.

Dhana Jiru

Dhana Jiru is a mixture of coriander and cumin powder. If you don’t have any then add  1 tsp coriander powder and ¼ tsp cumin powder

Salt

Add according to your taste.

Sugar| Brown Sugar | Jaggery Powder

Add a little to balance the flavours.

Lemon Juice

To add a bit of tang. Can use fresh or the bottled lemon juice.

Fresh Coriander

Dhaniya, cilantro. Wash and chop the fresh coriander. If the stems are tender, chop them as they are very flavourful.


Serve it with Tomato Ketchup or Green Chutney

Ingredients

  • ½ cup peas cooked
  • ½ cup carrots peeled and diced
  • 1 cup potato peeled and diced
  • ½ cup corn kernels cooked
  • ¼ cup fresh coriander chopped
  • ½ cup onion finely chopped
  • 1 tbsp oil
  • ½ tsp mustard seeds
  • 1 tsp cumin seeds
  • tsp asafoetida optional
  • 1 tsp salt
  • 1 tsp jaggery powder or sugar
  • 1 tsp coriander cumin powder
  • ¼ tsp turmeric powder
  • 2 tbsp lemon juice
  • 1 tsp ginger paste
  • 1 tsp chilli paste
  • 10-12 slices of white or brown bread
  • 5-6 tsp butter room temperature

Instructions

PREPARE THE VEGETABLE MASALA

  • Steam or boil peas and sweet corn. However, if the corn is tender and you are using petit pois then no need to pre cook.
  • Heat oil in a medium size pan over medium heat.
  • Add mustard  and cumin seeds. When it begins to splutter, add the chopped onions and asafoetida if using any.
  • Stir fry the chopped onion till it becomes a bit soft.
  • Add ginger and green chilli paste. Str fry for 3 seconds.
  • Add the carrots, potatoes,salt and turmeric powder. Reduce the heat to a low setting.
  • Cover the pan and let the vegetables cook till done. You may need to add about 2 tbsp water.
  • Add the peas, corn, sugar, red chilli powder if using any and coriander cumin powder.
  • Mix well. Cover the pan and allow the mixture to cook for 2-3 minutes on low heat.
  • Remove from the heat.
  • Add the fresh coriander and lemon juice. Mix well. Adjust the taste of the masala according to your preference.
  • Allow the vegetable masala to cool down before suing it to make the sandwiches.

MAKE THE SANDWICHES USING A GAS STOVE TOASTER

  • Butter the slices of bread on one side.
  • Place the buttered slice on one side of the toaster. The buttered side should be down.
  • Add the vegetable masala. Spread it out evenly.
  • Place another slice of bread on top of the vegetables, buttered side facing up.
  • Close the sandwich toaster. Clip it.
  • Toast the sandwich on one side over low gas flame for 3-5 minutes.
  • Flip the toaster and cook the other side for 3-4 minutes.
  • Keep checking to make sure the sandwich is not burning.
  • Open the toaster and remove the sandwich. Serve with some tomato ketchup or green chutney.

USING AN ELECTRIC SANDWICH MAKER

  • The one I have makes 2 sandwiches at a time. That is 4 triangles.
  • Switch the toaster on. Place bread slices on each cavity with the buttered side down.
  • Fill with the vegetable masala. Spread it out evenly. Don't fill too much as the toaster may not close.
  • Arrange a bread slice each on the vegetable masala with the buttered side facing up.
  • Close the toaster. Clip it well.
  • Toast till the toaster light turns green.
  • Remove carefully with the tongs provided and serve.

Notes

  • Can use leftover vegetables e.g. dried potato sabji to make these sandwiches. 
  • Can add a bit of garam  masala if you wish to the vegetables.
  • If you are using normal peas and sweet corn, then make sure you steam or boil them before, as they may take longer to cook compared to the potato and carrot.
  • Can use frozen vegetables.
