Recipe: Green Salad With Avocado
Green Salad with Avocado Dressing is a simple,filling, healthy, refreshing salad with a homemade condiment. Love making this salad whenever I make Avocado Dressing. Not only do I love the hues of green but also the flavours and textures. This salad has more salad leaves compared to the other ingredients used.
Avocados And Me
When it comes to avocados, I simply love that fruit or should I say large berry. Yes, it is classified as a large berry. Growing up in Nairobi meant lots of avocado trees around us. Back then avocado was not readily sold in the markets. It was a fruit you picked up from neighbours’ gardens. a sprinkle of salt and pepper and we were good to go. The only time I found avocado in the restaurants was when Avocado Vinaigrette was a vegetarian starter option on their menus.
It is during 1980s that avocado gained popularity as a health food in US and that trend quickly spread to other parts of the world. Avocado toast was a fine dining dish. I was introduced to avocado toast by my son when he was doing his hotel management degree. During one of his holidays he made for me avocado toast and boy did I love it. Till then avocado was only enjoyed in salads.
A few days ago hubby was narrating to me the 10 most expensive foods in Canada. And avocado was on the list. Had to tell him, I will forgo a pastry but not avocados. His reply ” sweety, when I can’t afford an avocado I will let you know.” Avocados are always on my shopping list as I love to have it with my eggs. Remember sometime back there was a trend of breaking an eggs into halved avocado and baking it till the egg gets done. Well, I tried that. And hubby and I both agree it tasted aweful!

As soon as Sneha announced ‘ Create Recipes Using Avocado’ I had to participate. Was just two days from closing down my kitchen as we were travelling and decided to make something simple and redo an old post – Avocado Salad Dressing. Hubby was gettign a bit frustrating thinking that on the day we leave I might throw away some of the ingredients. But no…used them up for a salad and must say the avocados were just right, ripe but a bit firm on the day I made the salad.

Ingredients Required For Green Salad With Avocado Dressing
Avocados
We need 2 avocados, one medium for the salad and a small one for the dressing. Cut the medium avocado into half. Dice into small pieces or slice it. For the dressing, cut the avocado into half and scoop out the pulp using a spoon.
Green Salad Leaves
Any of your choice, use one type like just arugula. Or use a mixture like arugula, ice berg, baby spinach, endive, kale, etc.
Cucumber
I prefer to use the small Persian or the long English cucumber. Both have soft skin which means you don’t need to peel it off. Cut the cucumber into slices or cubes.
Mint
Adds a lovely flavour to the salad. Remove the leaves from the stem. If the leaves are big tear with your fingers and add to the salad.
Basil
Adds a sweetish taste. Chop into thin ribbons.
Spring Onion
I chopped the whole spring onion and added to the salad. You can opt to use only the green part and leave the white part for another recipe.
Olives
If possible, choose green olives for this salad. If they are too big slice them or add them whole. Add according to your preference.
Pumpkin Seeds
Toast the pumpkin seeds in a wide pan over low heat for 2-3 minutes. Alternately, roast them in the microwave oven for 1 minute.
Lime
Need lime juice for the chopped avocado that we will add to the salad. Also need some for the dressing.
Yogurt
We need plain thick yogurt for the dressing.
Jalapeño
Add to the dressing according to your taste. Half jalapeño was perfect for me. Not too hot and yet adds a flavour.
Salt
Use any salt of your choice. I have used normal table salt. Add according to your taste.
Pepper
Coarsely ground pepper. Best to crack the peppercorns fresh for full flavour.
Garlic
I have used 1 large clove of garlic. Peel and add to the dressing ingredients.
Coriander
Also known as cilantro, wash and chop it up roughly. I add the stalks too as they are full of flavour.

GREEN SALAD WITH AVOCADO DRESSING
Ingredients
FOR THE GREEN SALAD
- 3 cups mixed green salad leaves
- ¼ cup mint leaves
- 8-10 basil leaves
- ¼ cup spring onion chopped
- 2 small cucumbers sliced
- 1 medium avocado cut into slices or cubes
- 1 tbsp lime juice
- 8-10 green olives
- 2 tbsp pumpkin seeds roasted
FOR THE AVOCADO SALAD DRESSING
- 1 small avocado
- ½ cup thick yogurt
- ¼ cup fresh coriander/cilantro chopped
- 1 clove garlic peeled
- ½ -1 jalapeño
- ½ tsp salt
- ¼ tsp coarse pepper powder
- 2 tbsp lime juice
Instructions
PREPARATION OF THE GREEN SALAD
- Wash the salad leaves. Pat them dry on a kitchen towel.
- Put the leaves and mint in one big bowl.
- Slice or cube the cucumbers. Add to the bowl.
- Slice or cut the avocado into cubes. Add lime juice and mix so it doesn't turn black.
- Add to the salad.
- Add olives, chopped spring and the roasted pumpkin seeds. If the olives are big you can slice them.
- Toss the salad.
- Leave it in the big bowl or divide it between two salad plates.
PREPARATION OF AVOCADO SALAD DRESSING
- To prepare the dressing, add all the ingredients in a blender jug.
- Process to a smooth consistency.
- Adjust the salt and pepper according to your taste.
- Drizzle the dressing over the salad or serve it on the side.
