RECIPE: UGANDAN ROLEX

Ugandan Rolex has nothing to do with the famous watch brand Rolex. On the contrary it is a popular street food in Uganda which has a vegetable loaded omelette rolled up in a chapati or flatbread. The word rolex comes from rolled eggs. Enjoy Ugandan Rolex for breakfast, dinner, lunch or even as a snack.

It is easy to make, cheap, filling, nourishing and best part is that it is a handheld food item. Roll up the Rolex in an old newspaper and serve it. Some may offer it in a brown paper bag. Best enjoyed while it is hot.

Generally, the eggs are whisked with the chopped vegetables and seasoning in a plastic mug. Then, the omelette is prepared on a huge tawa or frying pan over coal fire. While the top of the omelette is still wet, a chapati is placed over it. This actually ‘sticks’ the chapati to the omelette. Roll it up and serve.

What Vegetables Are Added To The Omelette?

In fact, the cheapest available vegetables like onion, cabbage, tomato are added. That makes it authentic. Some variations may have fresh coriander, chopped green chillis, ginger, green capsicum.

 

What Is Chapati?

East African Chapati is quite different from the traditional Indian chapati or roti. It actually is a flaky, soft, slightly chewy flatbread made from all purpose flour. Check out the recipe for Kenyan Chapati here. It is the flaky, layered chapati that adds a different taste and texture to this popular street food. I have tried this recipe with regular paratha and it does not taste the same.

 

A Bit About The Group

This group has been running for a very long time. A member of the group chooses a theme for a particular month. The admins pair up the partners. They give each other 2 secret ingredients to include in their dish. Other members have to guess the secret ingredients. This is a fun theme and also helps us to foster friendship between members.

This month’s theme, World Street Food was suggested by Preethi who blogs at Preethi’s Cuisine. For this theme she has prepared super tempting Firi Firi which are Tahitian Donut.

My Partner

This month my partner is Anu Kollon who blogs at Ente Thattukada. She asked me to use coriander and cabbage in my dish which worked out perfectly well for the Ugandan Rolex. And I requested that she uses seaweed sheet and garlic. Using those two ingredients she has made finger licking Korean Street Food, Kimbap.

MAHAMRI/MANDAZI
Mahamri is basically like a doughnut but it is flavoured with coconut and cardamom powder. Doughnuts are ring shaped, but Mahamri is usually triangular in shape or sometimes round. Generally mahamri is enjoyed as a breakfast item on its own with tea or coffee or with mbaazi (pronounced as mmmbaaazi). Mbaazi is soaked pigeon peas cooked in coconut milk.

Ingredients

  • 2 chapati
  • 4 large eggs
  • ¼ cup tomato finely chopped
  • ¼ cup onion finely chopped
  • ¼ cup cabbage finely chopped
  • 2 tbsp coriander/cilantro chopped
  • ½ tsp black pepper powder
  • ½ tsp salt
  • 2 tbsp oil

Instructions

  • Heat a frying pan over medium heat.
  • Crack two eggs in a bowl or jug.
  • Add half amount of the chopped tomato, onion, cabbage and coriander.
  • Add half amount salt and pepper.
  • Whisk the egg mixture.
  • Add 1 tbsp oil in the frying pan.
  • Pour the egg mixture.
  • Allow it to cook for 2-3 minutes.
  • When the top is just a little wet, place the chapati over it.
  • Flip the omelette and chapati over. This way the chapati is at the bottom.
  • Allow the chapati to become warm for 1-2 minutes.
  • Roll the chapati and omelette.
  • Wrap in a foil or parchment paper and serve immediately.
  • Repeat the above steps for the second Ugandan Rolex.

Notes

  • Add vegetables of your choice.
  • Can add chopped green chillis and ginger.
  • Use ready made flaky paratha if you can't make the chapati at home.
