Recipe: Chocolate Medallions

Chocolate Medallions are fun, quick and easy sweet candy or confection to enjoy. One medallion is enough to take care of your craving for something sweet. I like making these medallions as I am able to add a variety of dried fruits, seeds and nuts.

  • Easy to make so you can make a fresh batch within 20 minutes. It also does not take too long to set.

Sharing Chocolate Medallions With Sunday Funday Group

Sundays come so quickly, image now its fall time, soon it will be Diwali followed by Christmas and the year ends. Karen who blogs at Karen’s Kitchen Stories suggested we prepare some candy or a dessert that has some candy. When it comes to candy I am not the hard boiled sweets, toffee or gummy person. I love chocolate and fizzy joy of love hearts by Swizzels Matlow. The latter is not easily available everywhere. Therefore, enjoy it whenever I go to UK. Hubby insisted that I make M&M cookies but I am leaving that for Christmas time.

Memories

I had made Chocolate Medallions for the first time way back on 27/06/2016. I had shared the recipe with the group FoodieMonday/ Blophop. The 46th theme was dry fruits. We had to use dry fruits or rather dried fruits to make a sweet or savoury dish. The first thing that came to my mind was cookies or muffins.

Visit To Montreal – Had A  Great Time With My Son

We arrived in Montreal on 20th June. And it is so hot here. Coming from Mombasa, we didn’t want the hot weather. However, it is excellent weather for the Canadians after the long cold winter. It just gets too hot to switch on the oven so the idea of baking was thrown out of the window. A trip to the local supermarket to check buy some dried fruits was a surprise for me. I went with the intentions of buying either dried cranberries, blueberries or raisins. Imagine the surprise when I saw a mixture of dried banana, pineapple, kiwi and mango along with some cranberries. Bought that packet. After two days the idea of using the dried fruits for chocolate came to my mind. And viola in spite of the hot weather made some chocolate medallions. They didn’t last for too long, hubby and my son finished them in 2 days. Had to make another batch.

Evenings With My Son

Most evenings we would walk to either to the restaurant or for some ice cream. Evenings tend to get cooler and lots of people still out in the parks, restaurants, on the streets. All enjoying the long daylight time.

Fast forward to 2024, we now live in Canada. I so enjoy the different seasons, love fall and winter. Don’t care too much for spring as in Canada it is still cold and tends to rain a lot. Summers, well I still find them too hot. So I avoid getting out between 10 am to 5pm. Hubby and I go for walks either early in the morning or in the evenings when it is much cooler.

Ingredients Required For Chocolate Medallions

Chocolate

Use good quality chocolate. I prefer using 70% or 80% dark chocolate as the dried fruits add sweetness. You can opt to use a mixture of dark and milk chocolate especially if you are making the chocolate medallions for kids. Can drizzle some melted white chocolate if you wish. I like to use Lindt or Ghirardelli.

Dried Fruits

Any dried fruits of your choice. Can use one type or a mixture. You can also opt to make medallions with one type of  dried fruit. I like to use a mixture. Generally, 1 tbsp each of chopped dried fruits is enough. I have used dried mango, pineapple, banana slices, cranberries, kiwi and coconut slices.

Nuts

Can add some or leave them out. We love nuts so I add chopped walnuts, almonds , hazelnuts, pistachios, peanuts, etc. Depends on what I have in the pantry. About 1 -2 tbsp of chopped nuts is enough.

Seeds

Add seeds if you like. I like to add pumpkin, sesame and sunflower seeds. Depends on what I have in the pantry.

CHOCOLATE MEDALLIONS

Ingredients

  • 200 g dark chocolate chips
  • 1 tbsp each of dried mango kiwi, pineapple, cranberries and banana slices
  • 1 tbsp almond slivers
  • 1 tsp pistachio slivers
  • 1 tbsp sesame seeds
  • 1 tbsp pumpkin seeds
  • 2-3 dried rose optional

Instructions

  • Take a parchment paper about 12"X 8". Using a round small lid draw circles on the paper. I used a 2" inch lid. Turn the paper and tape the edges with sellotape to a tray or work board. The circles are your guidelines.
  • Keep whatever dried fruits, nuts and seeds you are going to use. I used dried banana slices, mango, cranberries, kiwi and pineapple. I added sesame and pumpkin seeds. Also added some almond and pistachio slivers.
  • Melt chocolate either over boiling water or in the microwave oven.
  • To melt chocolate over boiling water,put chocolate chips in a small heatproof bowl. Heat the water in a saucepan. Place the bowl in the pan, it should not touch the water. So make sure it sits at the rim of the pan. Mix the chocolate with a spoon. The steam from the hot water will melt the chocolate.
  • To melt it in the microwave oven, put the chocolate chips in a microwavable container. Heat for 40 seconds.  Remove the container from the microwave oven and mix the chocolate chips. Return the container into the microwave oven and heat further for 15-20 seconds. Mix well. The time required to melt the chocolate will depend on your microwave oven. Mine gets melted in 1:15 seconds.
  • Put a tablespoon of the melted chocolate on one of the traced circle. Spread it out a bit. Repeat till the melted chocolate is over.
  • I put each fruit, nuts and a sprinkle of seeds on each medallion so that each piece has an equal amount of fruit, nut and seeds.
  • Put the medallions with the tray or board in the fridge till the chocolate sets.
  • Or you can use small silicon muffin cups. Add about a tablespoon or two of the melted chocolate. Add the toppings. Allow the chocolate to set in the fridge.
  • Remove the medallions from the paper or muffin cups. Store in a container in the fridge till required. Believe me, cold chocolate medallions taste so much better than the room temperature ones.

Notes

  • I haven't give the exact measurements of the dried fruits, nuts and seeds as the amount required depends on the type of fruits, nuts and seeds you use.
  • You can add any fruits, nuts and seeds of your choice.
  • Use a mixture of dark, milk and white chocolate.
  • Use white chocolate instead of dark and milk chocolate.
    The number of medallions you get will depend on the diameter of the circle.
