Maple Panna Cotta With Roasted Figs

RECIPE: MAPLE PANNA COTTA WITH ROASTED FIGS

Maple Panna Cotta With Roasted Figs is a super creamy, silky, exquisite, easy to make dessert. The roasted fig adds so much flavour and texture to the overall dessert. I’ve used the light amber maple syrup which tends to be sweeter than the darker ones. Maple syrup not only adds sweetness but also adds a caramel like flavour.

What Is Maple Syrup?

Maple Syrup is actually made from the maple tree sap or the xylem sap. Usually maple water or maple sap is tapped from red,sugar or balck maple trees. The maple water or sap is colourless. It is collected and boiled to remove the water content. Lighter colour maple syrup is more sweeter than the darker variety.

Quebec State in Canada is the largest producer of maple syrup in the world, following by Vermont in US. While Canada grades the maple syrup in numbers (1.2.3) US tends to grade it letters (A,B,C). Grading of maple syrup depends on how translucent it is. A tool called light transmittance meter  helps producers to classify the maple syrup.

During Summer we went for a hike on Mont Pinacle, Coaticook. The beginning of the trail has a large maple forest, where I saw long tubes weaving through the forest. I was told that, that is how maple water is collected from the maple trees.

Uses Of Maple Syrup

Living in Quebec, it would be sad not to take the opportunity to use maple syrup. I use in place of honey and sugar whenever I can. Right from desserts to salad dressings and in coffee. I’ve yet to acquire the taste of maple syrup in Indian Masala Tea, though. Since our arrival in Canada, I’ve received so many bottles of maple syrup as presents.

In my culture, we celebrate happy moments, events with something sweet. Therefore, I am taking some Maple Panna Cotta with Roasted Fig for the party.

MAPLE PANNA COTTA WITH ROASTED FIGS

Ingredients

  • 2 cups whipping/double cream
  • ½ cup milk
  • cup cup maple syrup
  • tsp gelatin vege gel or agar agar powder
  • ¼ cup water
  • 2 tsp lemon zest
  • 4 fresh figs
  • 2 tbsp lemon juice
  • extra maple syrup for drizzling

Instructions

  • PREPARATION OF MAPLE PANNA COTTA
  • First, add gelatin(veg gel or agar agar) to the water and mix well. Use a microwave safe bowl.
  • Allow the mixture to bloom (rest) for 10 minutes.
  • Add cream, milk and maple syrup to a saucepan.
  • Place the saucepan over medium to low heat.
  • Allow the cream mixture to become hot, mix frequently.
  • Do not boil it.
  • Melt gelatin (veg gel or agar agar) by placing the bowl in the microwave. Microwave for 30 -40 seconds.
  • Add the melted mixture to the hot cream mixture.
  • Add 1 tsp lemon zest. Mix well.
  • Pour the cream mixture into ramekin bowls or any dessert bowls.
  • Cover the bowls with cling film and allow it to chill for 4-6 hours or overnight. I prefer to chill it overnight. This allows the panna cotta to set.

ROAST THE FIGS

  • Preheat the oven to 200°C.
  • Wash and cut the figs into halves.
  • Arrange the figs on a baking tray, cut side facing up.
  • Drizzle 1 tbsp of maple syrup over them.
  • Roast them in the oven for 25-30 minutes.

FINAL PREPARATION

  • Remove the chilled maple panna cotta from the fridge.
  • Add warm roasted figs on top, each bowl gets 2 halves.
  • Drizzle some maple syrup over the figs, sprinkle some lemon zest.
  • Drizzle some lemon juice over the figs and serve.

Notes

  • Replace gelatin with vege gel or agar agar powder. Soak it like gelatin for 10 minutes and then melt by heating it in the microwave for 30-40 seconds.
  • If you don't have a micrwave oven, then you can melt it by placing the bowl with gelatin and water in hot water and stir. Use the same method for vege gel or agar agar powder.
  • Try and get real maple syrup and not a generic product.
  • Use fresh whipping or double cream. Cool whip and similar products do not give the same creaminess.
  • Replace the figs with any roasted fruit of your choice. Can add fresh fruit coulis or even just top with fresh fruit on its own.
