The #FoodieMonday #Bloghop group decided on #Coconutmilk as the #86th theme. I was happy as I could just think of pina colada muffins (which has been on my ‘to do’ list for ages). However, hubby dear dashed all my hopes of baking muffins as he just said pretty adamantly ‘no baking muffins in this house, there’s been too many muffins.’ Truthfully, haven’t blogged a new muffin recipe in a long time, but how do I explain to hubby dear that the ones I baked last week were for friends and neighbours as they had requested for them. Anyway,will bake them pretty soon.

Thinking Of Healthier Recipe

Though pina colada muffins were stuck in my head, I had to think of using coconut milk in a different way. It is too hot for curries. I usually enjoy my smoothies for breakfast and hubby loves his oats. So that is how the idea of making overnight oats using coconut milk came about. Hubby was quite happy to enjoy cold oats for breakfast and for me it was a pleasant change from my usual smoothie.

Memories

The first time I ever had overnight oats is when my daughter made it. She had to leave for work pretty early so she would carry her overnight oats and enjoy it in the bus ride to work. Once she made some for me and asked me to try it. Truthfully, am not a big fan of cold gooey oats. They have to be hot or in my smoothie. However, I was pleasantly surprised how creamy and delicious the oats tasted.
Henceforth, overnight oats became a standard fair, well at least twice or thrice a week. And we experimented with different flavours, fruits, nuts, seeds, spices, and milks too.

Time To Get Overnight Oats Recipe On My Blog

In spite of the different varieties my daughter and I made, overnight oats somehow was not on my list when I started the blog. However, as the saying goes, the right time comes for everything. So this week it is time to showcase my pineapple overnight oats. Can easily pass off as a pina colada one if you are not too finicky about enjoying a bit of rum in the mornings.
Am sure hubby would have frowned at that idea so I stuck to just pineapple overnight oats and not pina colada overnight oats.

 

Basic Rule For Preparing Overnight Oats

The ideal formula to remember is:

one part oats : one part milk : ½ part yogurt
That means if you take ½ cup oats then you need ½ cup liquid or milk and ¼ cup thick yogurt.

Chia Seeds

Then you have the option of adding chia seeds. Some add 1 tbsp per serving but I prefer 1 tsp. I find that adding 1 tbsp makes the oats a bit too thick and dry.

Oats

Best to use old fashion rolled oats but you can use quick oats and the results are good. I prefer using Quaker Oats as they are not too fine or powdery.

Milk

Use dairy milk or any nut milk. For vegan option, opt for vegan friendly milk like coconut, almond, cashew nut or oats milk.  Sometimes I add a bit of fresh cream especially if I am making peaches and cream overnight oats.

Yogurt

Make sure the yogurt is thick and not sour. Use plain of flavoured. If I use flavoured yogurt then I omit sweeteners as the yogurt tends to be sweet. For vegan version, use vegan friendly yogurt.

Then you have all the different Add Ons:

Fruits

Best to use fresh fruit. However, you can add dry fruits too like dried cranberries, blueberries, dates, figs, raisins, apricots, etc. Can use frozen fruits or canned too.

Seeds and Nuts

Add both or either. Some example of seeds are sesame seeds, sunflower seeds, pumpkin seeds,etc. Add nuts like walnuts, pecans, cashew nuts, pistachios, roasted peanuts, almonds, etc.

Spices/ Flavours

Use single spices like cinnamon, cardamom, nutmeg, etc or a mixture of spices. Pumpkin pie spice, apple pie spice, chai spice, etc. Jazz it up with vanilla extract, orange lemon zest or any flavouring of your choice.

Sweeteners

Add normal white sugar, brown sugar, jaggery powder, palm jaggery, honey, maple syrup, agave syrup, stevia, etc. If I add a naturally sweet fruit puree like mangoes or dates, then I don’t add any sweetener.

Do I Need To Buy Special Jars For Overnight Oats?

Not at all. Save up those empty jam, peanut butter, spreads jars. Wash them well and use it for overnight oats. Just make sure the lids screw on tight if you are carrying to work.
If you’re going to enjoy it at home, use your regular bowls or glasses. Just make sure you cover them with a cling film or a lid to avoid other flavours getting into your oats.
Please do not use an empty Indian Pickle Jar… the smell of the pickle just doesn’t seem to disappear.

PINEAPPLE OVERNIGHT OATS

Ingredients

  • 1 cup oats
  • 1 cup coconut milk
  • 2 tsp chia seeds
  • ½ cup plain yogurt thick
  • generous pinch salt
  • ½ cup pineapple pieces cut into bite size pieces
  • 1 tbsp grated coconut fresh or desiccated
  • 1 tbsp almond chopped
  • 2 tbsp maple syrup

Instructions

  • Add oats, chia seeds, coconut milk, yogurt, salt and maple syrup in a mixing bowl.
  • Mix well.
  • Alternately, divide the ingredients into two jars or bowls and mix.
  • Divide the mixture between two jars, bowls or glasses.
  • Cover and put them in the fridge to allow the oat to soak and chill overnight.
  • Next day add the chopped pineapple.
  • Top it up with grated coconut and almonds.
  • Drizzle a bit more maple syrup if you wish.
  • Enjoy your healthy breakfast.

Notes

  • Adding nuts the next day adds a bit of crunch, but you can add them at night too.
  • If the soaked oats are too thick, add more milk if you prefer.
  • Remember chia seeds absorb a lot of liquid so add accordingly.
  • Add toppings of your choice.
