Recipe: Strawberry Cheesecake Frozen Yogurt
This Strawberry Cheesecake Frozen Yogurt is a creamy, cool, refreshing, delish dessert to enjoy during the summer season. Blend all the ingredients, pour it into a freezer friendly container and allow it to set. Alternately, use your ice cream maker and the frozen yogurt is ready within 20 minutes or so.
Unpredictable Weather
Usually when we buy loads of strawberries especially when they are on offer, hubby will say mousse. And me, I am thinking of some others way to use them. Strawberry sauce for my pancakes, cheesecake, muffins, etc. This time round when hubby walked in with 3 punnets of strawberries, I froze some of them. The whole purpose was to use them for frozen yogurt when the weather becomes a bit warmer. And warmer it did, a couple of days ago when from sleet kind of weather the temperature went up to 20°C! And then plummeted to 5ºC within 2 days. The day it was hot, we went for a long walk, but that got me all sweaty and hot. Got home and decided to make strawberry cheesecake frozen yogurt. Admittedly, I had to wait for it to freeze a bit, but totally worth the wait.
Memories
The first time I had made strawberry frozen yogurt was when I was gifted an ice cream maker by my brothers. At that time every time I would invite guests over to our place for a meal, homemade ice cream was on the menu. I used that machine a lot. It was from the booklet that I got with the machine that I tried out strawberry cheesecake frozen yogurt. Not only us but our guests loved the cheesecake flavour but frozen. When I moved to Canada, I obviously couldn’t bring my ice cream maker with me. I passed it on to my friend and her daughter in law makes good use of it. Considering that Mombasa has hot weather throughout the year, ice creams are the preferred dessert option.

Ingredients Required For Strawberry Cheesecake Frozen Yogurt
Strawberries
Use fresh or frozen strawberries. We need 16oz (about 453g), which is usually the large punnet we get in the stores. In cup measurement it is about 4 cups.
Cream Cheese
About 1 cup cream cheese or measure out 200g. Use good quality cheese cream.
Greek Yogurt
Plain Greek Yogurt is the best. I have used 2%.
Fresh Cream
We need about 1 cup of whipping cream. Make sure it is cold.
Sugar
Add white sugar according to your taste. If the strawberries are sweet you may need less. Anywhere between ½ – ¾ cup. Taste the blended mixture before freezing it. If required add more sugar and blend for a few seconds.
Vanilla Extract
About 1 tsp is all you need.
Lemon Juice
1 tbsp of fresh lemon juice. I prefer freshly squeezed as opposed to the bottled lemon juice.
Topping
Can add graham crackers crumbs. If you do add just before serving. If you add before freezing the mixture, the crumbs become soggy. I decided to serve the frozen yogurt with a cookie on the side rather than the crumbs.

STRAWBERRY CHEESECAKE FROZEN YOGURT
Ingredients
- 16 oz strawberries approx. 4 cups
- 200 g cream cheese
- 1 cup plain Greek yogurt
- 1 cup whipping cream
- ½-¾ cup sugar
- 1 tsp vanilla extract
- 1 tbsp lemon juice
Instructions
- If you are using fresh strawberries, wash them.
- Hull the strawberries. If they are large cut them into halves.
- Add the strawberries (even frozen ones) to a blender jar.
- Add the cream cheese, Greek yogurt, whipping cream, sugar, lemon juice and vanilla extract.
- Blend the mixture to a smooth consistency.
- Taste the mixture to check for sweetness. If required add some more.
- Blend or mix for a few seconds.
- Pour the strawberry cheesecake mixture into a freezer friendly container .
- I like to use my loaf tin.
- Cover it with a foil.
- Freeze for 6 hours or overnight.
- Take the frozen yogurt out of the freezer at least 15 -20 minutes before you need to serve. If you are in a hot place, then perhaps 10 minutes is enough.
- Scoop the strawberry cheesecake frozen yogurt into serving bowls.
- Top with graham cracker crumbs or add a cookie on the side.
- Serve.
- If you have an ice cream maker, add the blended mixture to the cold bowl and churn for 15-20 minutes. For soft serve you will need to churn for 15 minutes. For a firmer set you need more time.
- Best to follow the instructions given for you machine.
Notes
- If you find that the frozen yogurt has formed some water crystals, simply whisk it lightly with a hand blender or in the blender. Blend for a few seconds only as you don't want it to turn into a smoothie.
- As mentioned can use either fresh or frozen strawberries. If you want to freeze the strawberries at home, arrange them on a tray in a single layer. Freeze them. When frozen transfer them to a freezer friendly airtight container or a ziplock bag.
- Must remove the frozen yogurt from the freezer. Allow it to melt a bit at room temperature. For colder places it takes about 15-20 minutes. For warmer places 10 minutes.
