Kachumabari, Kenyan Salad is the easiest, most popular and a superbly delicious side dish that goes well with chicken, fish, barbecued meat (nyama choma), kebabs, tikkas, pilau, ugali, etc. It is a basic salad of tomatoes, onion, fresh coriander, lemon and a bit of chilli.
Also known as cow peas, black eyed peas or beans. I am not sure if you get canned ones. I usually soak the dry black eyed beans in warm water overnight. Next day drain out the water, wash the beans and cook them. If cooking in a pressure cooker, add enough water, some salt and pressure cook for 3-4 whistles over medium heat. I cook them in my Instant Pot. Added the soaked beans with water 1 inch above the level of the beans, 1 tsp salt and switched on the pressure cook setting. The beans got cooked in 12 minutes. I allowed the pressure to release naturally before opening the lid. Usually I cook a big batch. I store the beans in the freezer in an airtight container or use them to make a curry ( chora nu shaak). For this recipe we need 2 cups of cooked lobia.
Paneer
Homemade or ready made. I have used about 100g of paneer. You can replace paneer with any other protein rich food like cooked meat, chicken, fish, tofu or cheese. Cut the paneer into small cubes. We will be roasting the paneer a bit in some oil.
Cucumber
I like to use either Persian or English Cucumber as it doesn’t need to be peeled and also the seeds are soft or hardly there. Dice the cucumber.
Onion
Peel and dice a small onion. Red tastes best but can use white or yellow.
Tomato
Best to use baby tomatoes or Roma as they don’t tend to be watery. If you are using Roma, dice them. If you are using baby tomatoes, then cut them into halves.
Mango
Semi ripe mango, peeled and diced. Best to use raw or semi raw mango. Ripe mango will result in a very sweet salad.
Fresh Coriander
Or cilantro. Wash and finely chop the coriander along with the tender stems.
Fresh Mint
Fresh Mint adds flavour to the salad.
Carrot
Peeled and diced or shredded.
Pomegranate
Add some pomegranate arils. If you don’t get any then replace it with green apple or grapes.
Cashew Nuts
Lightly toasted and chopped into pieces. I toast them in the microwave oven for about 2 minutes. Can replace cashew nuts with any other nuts of your choice.
Bell Pepper
Any colour of your choice. Dice the bell pepper. Cut into half, remove the seeds and white core. Dice.
Oil
I have used sunflower oil. Use any oil of your choice. We will be using the oil to roast the paneer a bit.
Lemon Juice
Can replace lemon with lime. Add according to your taste. I tend to add a bit extra as we like the salad to be a bit tangy.
Salt
Add according to your taste.
Red Chilli Powder
Add according to your taste.
Chaat Masala
Chaat masala is a popular Indian spice blend or masala which is a bit salty, tangy and spicy. Easily available in all Indian Stores or online.

Ingredients
FOR THE LOBIA | BLACK EYED BEANS
2cupslobia/ black eyed beans cooked
3-4 cupswater
½tspsalt
REST OF THE SALAD INGREDIENTS
1cupcucumberdiced
¼cupred oniondiced
10baby tomatoeshalved
½cupsemi raw mangodiced
¼cuppomegranate arils
½cupcarrot diced
12cashew nutstoasted
¼cupfresh corianderchopped
¼cupbell pepper, any colourdiced
10mint leavesfresh
2-3tbsplemon or lime juice
2tspchaat masala
½tspred chilli powder
1tspsalt
2tbspoil
100gpaneercubes
Instructions
HOW TO COOK LOBIA | BLACK EYED BEANS
Soak 1 cup of dried black eyed beans in enough warm water for 6-8 hours or overnight.
Drain out the water. Wash the beans under running water.
Transfer them to a pressure cooker or an Instant Pot.
Add 3-4 cups of water and the ½ tsp salt.
Close the lid properly.
If using a pressure cooker, allow the beans to cook over medium heat for 3-4 whistles. Allow the pressure to release naturally and then open the lid.
If using an Instant pot, click the pressure cook setting. Set it as normal and for 12 minutes. Allow the pressure to release naturally.
Drain out the water. Allow the beans to cool down completely.
ROAST THE PANEER
Cut the paneer into small cubes.
Add oil in a wide pan and heat it over medium heat.
When the oil is hot, add the paneer cubes.
Allow the paneer to become light golden and then turn the pieces over.
Allow the sides touching the pan to become light golden brown.
Take the pan off the heat. Allow the paneer to cool down.
Can add the cashew nuts to the hot pan and allow them to rest. They will get slightly roasted.
Alternately, toast them in the microwave oven for 2 minutes. Allow them to cool down.
PREPARE THE LOBIA PANEER SALAD
Add the cooked beans, paneer along with the oil, cashew nuts in a mixing bowl.
Add the diced cucumber, carrot, onion, bell pepper, mango and tomatoes.
Add the chopped coriander.
Tear the mint leaves into halves or chop roughly and add to the salad.
Add the pomegranate, lemon juice, salt, red chilli powder and chaat masala.
Toss the salad well. Can chill it in the fridge for 1 hour or enjoy immediately.
I like to chill it for a while as that allows the flavours to infuse.
Notes
Replace paneer with cooked chicken, meat, fish or tofu.
Add a salad dressing of your choice. Tastes good with a creamy dressing. When I use a creamy dressing I don't add the chaat masala.
Add other vegetables/ fruits of your choice like cooked corn, broccoli, apple, grapes, boiled potato, roasted sweet potato, etc.
