The nuts and chocolate lovers will adore this delectable treat that comes together in a jiffy. No refined sugar used and no sort of cooking required, these No Bake Blossoms are perfect as a snack or to take care of your sweet tooth. Nuts and chocolate kisses are used for this easy peasy recipe. Don’t have chocolate kisses, don’t worry. Add some cocoa powder and mix with the nuts and dates. You can add melted chocolate but then that becomes a treat where a small degree of cooking is required. This is a versatile recipe and one in which kids can help. Older kids can actually make these blossoms on their own.

Memories

First time I had peanut butter blossom cookies I fell in love with them. Over Christmas time bought the Chocolate Kisses with the intention of baking the cookies at home. However, didn’t get round to it. A few days ago, hubby is going through the pantry and asked ” are we storing these chocolates till next Christmas?” That is when I decided that I’ll use them up immedaitely.

It’s been a while since I’ve participated in this group. Travelling means I don’t always get access to a kitchen or I don’t get time to write up the post. This month the theme suggested by Renu is No Cook. No sort of cooking allowed, no even microwave. Initially, I wanted to make a chocolate mousse using tofu. However, hubby wasn’t too happy with that idea. Then came the idea of preparing a healthy dessert or snack treat using nuts and dates. That is when I decided to use up the Chocolate Kisses he had ‘targeted’. I’m glad I did that as these No Bake Blossoms taste awesome.

 

My Partner

This month my partner is Renu who blogs at Cook With Renu. When I discussed with her that I wanted to make a dessert, she suggested that I include vanilla and peanut butter in my dessert. Therefore, No Bake Blossoms worked well with these two ingredients. As she wanted to make a spread I suggested she uses tofu and lemon juice. With those two ingredients included in her Tofu Avocado And Chives Spread recipe, she has come up with an easy, delicious, versatile, healthy spread that will be perfect for picnics, summer parties and sandwiches.

Ingredients Required For No Bake Blossoms

Nuts

Can use any nuts of your choice. Since I wasn’t going to roast them, I omitted peanuts and walnuts. The cashew nuts and almonds I buy tend to be crunchy so don’t require any toasting or roasting. And so, I used a mixture of almonds and cashew nuts. I like Yupik brand when it comes to nuts and dried fruits. Am not paid to advertise for them. This is my personal opinion.

Desiccated Coconut

Use unsweetened desiccated coconut.

Nut Butter

Use any nut butter of your choice. I have used peanut butter which has no salt or sugar.

Dates

Dates for this recipe must be soft as we are not going to cook them. Remove the seeds before measuring.

Natural Sweetener

I have used maple syrup. You can use honey.

Vanilla Extract

Can use any flavours of your choice like almond extract, orange zest or lemon zest.

Cocoa Powder

If you decide to add cocoa powder to the nut date coconut mixture, make sure it is unsweetened.

Chocolate Kisses

I have used Hershey’s Chocolate Kisses. Can use dark chocolate kisses. Unfortunately, I didn’t get any so opted for the milk chocolate. If you don’t get any fill the blossoms with jam, peanut butter or melted chocolate.

Salt

I added a tiny amount of  Himalayan Pink Salt as the peanut butter has no salt. Omit if the nut butter you use has salt.

Ingredients

  • ½ cup cashew nuts approx.65g
  • ½ cup almonds approx.70g
  • ¼ cup desiccated coconut approx.40g
  • ¼ cup nut butter unsweetened
  • 4 pieces soft dates, pitted approx.35g
  • 2 tbsp maple syrup | honey
  • 1 tsp vanilla extract
  • tsp salt optional
  • 20 Chocolate Kisses
  • 4-6 tbsp unsweetened cocoa powder optional

Instructions

  • Remove the seeds from the dates.
  • Add the nuts, dates, coconut, nut butter, vanilla extract, salt and sweetener in a food processor.
  • Add cocoa powder also if using any.
  • Process the mixture till it almost comes together like a dough.
  • Remove the mixture into a bowl.
  • Take about a tablespoon of the mixture and roll it into a ball.
  • Use the back of a measuring spoon or your thumb and make an indent in the middle.
  • Put one chocolate kiss in the dent. Shape the nut mixture around it properly to get rid of cracks.
  • And No Bake Blossoms are ready.

Notes

  • Use nuts of your choice. Can use pecans, walnuts, hazelnuts, peanuts, etc
  • Use any natural sweetener of your choice. Agave nectar, date syrup, etc.
  • Use any nut butter of your choice. I have used peanut butter.
  • Fill the dents with jam, peanut butter or melted chocolate.
  • Store them in the fridge for later use.
