Recipe: Fattoush Salad
Fattoush Salad is a delicious tangy, slightly sweetish, crunchy Levantine Salad made with veggies, herbs and crispy pita. Fattoush is an ideal weight loss salad as it is low in calories, filling and flavourful.
Two Common Ingredients In Most Salads
As I have decided to share salads for the Alphabetical Challenge, I have realized that all salads be it from Africa, Asia, Europe, The Americas, all have two common ingredients – tomatoes and cucumber. Yup! When we make traditional or regional based salads for parties, as light meals, sides, etc we add all the ingredients together without thinking much. As I do my research for different salads, tomato and cucumber are in almost all of them! Not that I am complaining as I love both tomatoes and cucumber.
What Is Fattoush Salad?
Fattoush is a popular Salad in the Levantine Region. Toasted or fried leftover khobz or pita is the star ingredient of this salad. Tomatoes, cucumber, radish, salad greens, lots of fresh herbs, pomegranate molasses and sumac are added. Also known as Fattush, fatush, fatoosh, the salad belongs to a family of dishes known as fatteh which is based on using up stale flatbread. A few of the ingredients may vary in different parts of the Levantine Region but the star ingredient is the stale flatbread.

Fattoush is my favourite salad and am so happy that I am able to share the recipe because of the Alphabet Challenge organized by Wendy. Letter F is pretty easy, as there are so many ingredients one can use, fava beans, fruits, fennel, fish, figs, farro, etc. Then you have French, Finnish cuisines, dishes from Fiji. Food names like falafel, fajitas, fattoush, french fries, focaccia, etc.

Ingredients Required For Fattoush Salad
Pita Bread
Can use stale pita, naan, khubz. I cut the pita bread into pieces, brush it with olive oil, sprinkle some salt and bake it at 160°C for 25-30 minutes. Turns out nice and crispy. Can opt to fry stale pita bread or buy ready made pita chips.
Salad Leaves
I prefer to use Romaine or cos lettuce. However, you can opt to use a mixture of greens. Romaine adds a lovely crunch to the salad along with the pita.
Cucumber
I like using English or Persian Cucumber. The seeds and skin tend to be soft.
Tomatoes
Can use plum tomatoes chopped into bite size pieces or use baby tomatoes. If using baby tomatoes, cut them into halves.
Radish
Can use the small red ones or the large white one. Cut into bite size pieces or slices.
Onion
Peel and cut the onion into half. Then cut into thin slices. For this salad I prefer to use red onion. Feel free to use any onion of your choice.
Fresh Mint
Pluck the leaves from the stems. I have added about 1 cup of mint leaves.
Parsley
Pluck the leaves from the stems and chop finely. I have used about ½ cup of chopped parsley. Can use curly or flat parsley.
Pomegranate
Pomegranate arils.
Olive Oil
For the salad dressing and also to brush some on the pita bread before baking them.
Pomegranate Molasses
Available online or any Middle Easter Shop. If not available, can be made at home by reducing pomegranate juice. You may have to check for homemade pomegranate molasses online. I have not added honey or maple syrup to the dressing as the molasses was quite sweet.
Lemon Juice
Best to use fresh lemon juice as it is less sour and adds a deliciously fresh flavour to the salad.
Sumac
An essential for this salad. Can easily get some online or any Middle Easter Shop.
Garlic
1 large clove of garlic, peeled and minced.
Sea Salt
To sprinkle on the pita before baking and also for the dressing. Can use any salt of your choice.
Pepper
Coarsely ground pepper.

FATTOUSH SALAD
Ingredients
FOR THE TOASTED PITA BREAD
- 2 pita bread
- 1 tbsp olive oil
- ⅛ tsp salt
FOR THE SALAD
- 2 small Persian Cucumber or half English Cucumber sliced
- 1 cup baby tomatoes halved
- 4 whole red radish sliced
- ½ cup onion sliced
- 1 cup mint leaves
- ½ cup parsley finely chopped
- ¼ cup pomegranate arils optional
- ½ cup feta crumbled, optional
- 1 small head Romaine lettuce
FOR THE POMEGRANATE SALAD DRESSING
- ¼ cup olive oil
- 2 tbsp lemon juice
- 2 tbsp pomegranate molasses
- 1 clove garlic minced
- 1 tsp sumac
- ½ tsp salt
- ¼ tsp pepper powder
Instructions
- TOAST THE PITA BREAD
- Usually I toast any leftover pita bread for snacking or adding to salads and soups.
- Preheat the oven to 160℃.
- Line a baking tray with some parchment paper or silicon mat.
- In the meantime cut the pita bread into pieces. I had some cut into triangles which can easily snapped into smaller pieces.
- Brush the pita pieces with some olive oil.
- Sprinkle some salt over the pieces. I prefer to use sea salt but feel free to use any salt of your choice.
- Arrange the pita pieces in the baking tray.
- Toast for 15 minutes.
- Remove the tray from the oven. Turn the pita pieces over.
- Brush with olive oil and sprinkle some salt.
- Return the tray to the oven and bake for 10-15 minutes till the pita becomes crispy.
- Remove from the oven and allow the toasted pita bread to cool on a wire rack.
- Store in an airtight container till required.
PREPARATION OF POMEGRANATE SALAD DRESSING
- Add all the ingredients for the dressing in a jug or jar.
- Whisk to mix well. If you are using a jar, close the lid tight and give the jar a good shake.
- Adjust flavour according to your taste. Add honey or maple syrup if you find the dressing a bit too sour.
PREPARATION OF FATTOUSH SALAD
- Wash and pat dry the lettuce leaves well.
- Cut them roughly into bite size pieces.
- Add the salad leaves to a mixing bowl Alternately, arrange on the serving plates.
- Take a mixing bowl. Add all the salad ingredients except the feta cheese - cucumber, tomatoes, onion, radish,pomegranate, mint leaves and parsley.
- Mix the salad ingredients.
- Add on top of the chopped Romaine lettuce.
- Add the toasted pita bread pieces and feta cheese.
- Drizzle the salad dressing over the salad and serve.
- Alternately, toss everything in a mixing bowl and serve.
- This salad serves 2 as a light meal and 4 as a side or starter dish.
Notes
- Addition of pomegranate arils and feta is optional.
- Add quite a bit of lettuce as that makes it so crispy.
- Can use ready made pita chips. I prefer to toast pita at home.
- Add sweet pepper if you like.
- If you don't have sumac, add a bit more lemon juice.
