Recipe: Peaches & Cream Parfait

Peaches & Cream Parfait is an easy to make, delicious dessert without any refined sugar. I have mixed fresh whipping cream and cream cheese to give the classic dessert a slightly different flavour.

Memories

Growing up, the only parfait I knew were the ones sold at ice cream parlours and fancy restaurants. Generally, parfaits were served in tall glasses with long spoons. The parfait would have layers of fresh fruit, perhaps a bit of cake pieces or cookies with ice cream scoops and topped with whipped cream. Some grated chocolate, sprinkles and maybe a wafer biscuit or a flake chocolate. The famous place to go to for parfaits was Sno Cream in Nairobi. Now if you’ve lived in Nairobi and have not been to the famous iconic Sno Cream then you’ve not lived in Nairobi. Seriously, it was the only place to go to for a huge variety of ice creams and hot drinks. Sundays the queue would be really long and remember my siblings and I would take turns to wait for our turn.

Sno Cream still exists but all those exotic parfaits and sundaes are longer served. Basic flavoured ice creams, soft serve, chocolate dip, milkshakes and smoothies are on the menu.

 

What Is A Parfait?

Parfait is traditionally made by boiling cream, egg, sugar and syrup to create a custard or meringue like aerated puree. It is then frozen. Parfaits, pronounced as Par-fay, originate from France. Usually, French parfait is  served as a thick slice and decorated with whipped cream, fruits, chocolate, etc.

The American version of a parfait is quite different. Generally, it is served in glasses or bowls with layers of granola, nuts, fruits, cream, liqueur, sometimes includes cakes and cookies.

Nowadays parfaits are popular as breakfast options where layers of granola or oats are served with fresh fruits and yogurt.

 

My Version Of A Parfait

During summer, I simply couldn’t resist serving peaches and cream but in the parfait form. To make it a bit different I added cream cheese to the whipping cream. Friends and family loved this simple but delicious parfait dessert. And best part, because the peaches were naturally sweet and the granola had some honey, I added just a bit of maple syrup. Have not used refined sugar.

Ingredients Required For Peaches & Cream Parfait

Fresh Peaches

I have used fresh peaches for this recipe. Am sure you can replace them with canned peaches.

Granola

Any granola of your choice. I had granola with berries and nuts at hand and used that. The granola contained no refine or brown sugar.

Fresh Whipping Cream

I prefer the carton ones where I can whip the cream at home. Feel free to use the canned one.

Cream Cheese

I went for the store brand cream cheese as Philadelphia one was more expensive. Worked pretty well for me as the consistency and flavour was just like the branded one.

Maple Syrup

Add according to your taste and also depends on how sweet the peaches are. Can replace it with honey or any other natural sugar of your choice.

Lemon Zest

I had that in my freezer so used it add a bit fresh lemony flavour. Before I squeeze the lemons I grated the peel and store it in the freezer. It comes in handy for smoothies, bakes, salad dressings, oats, etc.

Vanilla Extract

Vanilla extract or essence to add some more flavour.

Ingredients

  • 4 peaches ripe
  • ½ cup granola
  • ¾ cup fresh cream
  • ¼ cup cream cheese
  • 1 tsp lemon zest
  • 4 tbsp maple syrup
  • 1 tsp vanilla
  • extra maple syrup optional

Instructions

PREPARE THE CREAM MIXTURE

  • Add whipping cream, cream cheese, maple syrup, vanilla extract and lemon zest in a mixing bowl.
  • Whisk the mixture till it becomes light and fluffy.
  • Cover the bowl with a lid or cling film and chill the cream mixture for at least 30 minutes.

PREPARE THE PEACHES & CREAM PARFAIT

  • Take 4 glasses or bowls.
  • Cut the peaches into slices or chunks. I kept all 4 separate as one peach is for each serving.
  • Take the cream mixture out of the fridge.
  • First, add a few chunks or slices at the bottom of the glasses.
  • Top with some cream mixture. I roughly divided the cream mixture into 8 parts. Add one part each in the glasses or bowls.
  • Add more peach chunks or slices.
  • Sprinkle about 1 tablespoon each of granola.
  • Add cream mixture, 1 part each.
  • Top with remaining peach slices or chunks.
  • Sprinkle some granola.
  • Peaches and cream parfaits are ready for serving.

Notes

  • Add seeds and nuts if your granola doesn't have any.
  • Can use fresh cream only if you want to.
  • I have not tried this dessert with canned peaches.
  • Cut the peaches just before serving as they can turn brown if left for long.
