RECIPE: MANGO & VANILLA PANNA COTTA
Mango & Vanilla Panna Cotta is molded chilled Italian dessert with layers of vanilla and mango. Smooth, velvety and so delectable. A melt in mouth kind of dessert, panna cotta is my favorite.What I love about making panna cotta is that is it so easy to make this luscious, mouthwatering dessert. It can be served with sauces, coulis, jam, jelly, etc.
Panna Cotta is so easy to make. Some heat the milk and cream together. Some heat milk and add to the cream. A setting agent like gelatin, agar agar, or vegetarian gelatin is added to allow the panna cotta to set. It should not be firm but more like a jelly consistency. Wobbly but set enough to dig in with a spoon.

With mango season, it seemed the right time to share a mango & vanilla panna cotta.

Ingredients Required To Make Mango & Vanilla Panna Cotta:
- Milk – full fat milk or 2% fat milk, for the vanilla layer.
- Whipping/ Heavy Cream – depending on what you get. For the Vanilla Layer. I didn’t add any for the mango layer as mango on its own provides the thick and creamy texture.
- Vanilla Extract – for the vanilla layer.
- Fresh Mango Puree -chop mangoes and puree in a blender. Can also use tinned mango puree.
- Sugar – required for both the vanilla and mango layer. The amount for the mango layer will depend on how sweet the mangoes are.
- Gelatin – remember 1 packet is 7g or ¼oz or 2½ tsp.
- Water or Mango Juice – for the mango layer, need it to bloom the gelatin.
- Cinnamon or Ginger Powder – for flavoring the mango layer. It is optional. I used ginger powder. Can also add vanilla extract.
- Topping: chopped fresh mango, any other fruit or nuts.

MANGO AND VANILLA PANNA COTTA
Ingredients
Ingredients for the Vanilla Layer:
- 2 cups double/whipping cream
- ⅓ cup sugar
- 1 tsp vanilla extract
- 1 cup milk
- 1 packet gelatin (7g or 2½ tsp)
Ingredients for the Mango Layer:
- 2 cups fresh mango puree thick
- 1/2 cup water/mango juice
- 1 packet gelatin (7g /2½ tsp)
- 2-4 tbsp sugar
- ½ tsp cinnamon or ginger powder optional
Topping:
- fresh fruit, or chopped mango, or nuts
Instructions
Preparation of the Vanilla Layer:
- Put the milk in a small saucepan.
- Sprinkle the gelatin over it and mix gently.
- Let the mixture rest or bloom for 10 minutes.
- In the meantime, pour 2 cups of whipping or double cream into a pouring jug.
- Get your bowls, glasses or ramekins ready for the dessert.
- After 10 minutes, put the saucepan over low heat.
- Add sugar and keep stirring till the gelatin and sugar have dissolved.
- Let the mixture become hot but not boiling hot.
- Pour the hot gelatin mixture into the cream.
- Add vanilla extract and mix well.
- Pour the vanilla mixture equally into the bowls or glasses, half way.
- Put the bowls or glasses in the fridge and let the panna cotta set for 2 hours or overnight.
Preparation of the Mango Layer:
- Put the water or juice in a small saucepan.
- Sprinkle the gelatin over it and mix gently.
- Let the mixture rest or bloom for 10 minutes.
- In the meantime, pour 2 cups of fresh mango puree or pulp into a pouring jug.
- After 10 minutes, put the saucepan over low heat.
- Add sugar and keep stirring till the gelatin and sugar have dissolved.
- Let the mixture become hot but not boiling hot.
- Pour the hot gelatin mixture into the mango pulp.
- Add spices if using any and mix well.
- Pour the mango mixture equally on top of the set vanilla panna cotta.Pour over a turned spoon so that the vanilla layer does not get disturbed.
- Put the bowls or glasses in the fridge and let the mango layer set till firm. This will take about 2 hours or more.
- Add a topping of your choice or leave it plain and serve chilled.
Notes
- Use a fruit of your choice instead of mango.
- Make vanilla panna cotta and serve it with a fruit sauce.
- Adding spices is optional.
- To make the layers more fancy, put the glasses slanting in a muffin tray. Pour the layer till it just about reaches the edge of the glass. Let it set. Stand the glasses vertically and pour the second layer. Put the glasses in the fridge to set.
