Summer in Montreal – Memory

It has been really hot for the past few days in Montreal. Humid and sunny, just the kind of weather Canadians enjoy after the long winter months. People walking, jogging, swimming, sailing, lazing in the sun, enjoying picnics. My dad is here from London, and he too is enjoying the bright sunny days. What a change for him from the grey, windy weather in UK. As for me I prefer to walk in the shade, sit under the trees as its too hot for me. Anyway, I get enough sun back in Mombasa.

My Choice of Ice Cream – Vegan Mixed Berries Ice Cream

While I was trying to figure out what kind of Ice cream I would make, I was so confused as the choice of summer fruits is enormous. Finally, the bright colored varieties of berries beckoned me. Berries were going to be my main ingredients. I dreamt of nice creamy berry ice cream but had to opt for not a creamy version with dairy cream but with frozen bananas. I also had to make a vegan version for my ‘recently converted to Veganism Hubby’. I’m glad I tried out this vegan ice cream as not only is the colour very attractive but the ice cream was so creamy without the cream.

Vegan Diet

A week ago the family watched a documentary on Veganism. After that we had a divided house.. my son and I thought that its just too tough to give up our dairy cheese and yogurt while daughter (who is miles and miles away) and hubby decided to adopt the vegan way of life. My dad, well he was just happy with the diet he has been following for years! Now, what really baffled me was that my meat loving husband and chicken loving daughter chose to follow the vegan diet. Most become vegetarians first and then follow the vegan diet but they both just dived into the deep end!

Do you need an Ice Cream Maker?

Not at all, a powerful blender or food processor is all you need.

Summer and Ice Creams/Frozen treats – go on try the following:

Ingredients required for Mixed Berries Ice Cream

Over ripe bananas – the more ripe they are the better as they add natural sweetness to the ice cream.

Mixed Berries – You can use any berries of your choice like blackberries, blueberries, strawberries, raspberries etc.

Sweetener – use any sweetener of your choice, cane sugar, honey, maple syrup, stevia, etc.  I decided to use maple syrup.

Salt – just a pinch to bring out the sweetness.

Nut/Soya Milk – use a nut based milk of your choice like cashew nut, almond, coconut nut or any suitable vegan milk.

Dietary Tips:

VEGAN MIXED BERRIES ICE CREAM

Serves 6-8

3 medium or 2 large over ripe bananas

2 cups mixed berries (I used blueberries, strawberries and raspberries)

¼ cup almond milk

2-4 tbsp cane sugar or maple syrup

a pinch of salt

  1. Peel and slice the bananas. Arrange in a single layer in a tray or plate and freeze.
  2. Wash and pat dry the berries with a kitchen towel. Arrange the berries in a single layer in a tray or plate and freeze them.
  3. Add the frozen berries, banana slices, salt, sweetener and milk into the jug of a blender or food processor.
  4. Process the mixture till you get a smooth paste like consistency.
  5. You may need to use a spatula to push down the berries and banana to make the processing easier.
  6. Scoop out the ice cream into a freezable container or tin.
  7. Freeze the ice cream for an hour.
  8. If you prefer you can serve it soft.
