We’re on letter P for the alphabet challenge initiated by Wendy. I was battling between pineapple and potato salads for this letter. Finally decided on pineapple as the one I bought was really sweet. Then the decision was between a sweet and savoury salad. The sweet one won as I thought I need to have one sweet salad recipe for the theme I chose this year – salads.For letter P quite a few options. Pineapple, persimmon, parsley, potato, peas, pears, plums, pork, poppy seeds, pepper, paneer, pumpkin, etc.

Pineapple
About a cup full of pineapple chunks. Chop the pineapple according to your preference.
Raspberries
About a cup full of raspberries.
Blueberries
About 1 cup of blueberries.
Strawberries
About 4-6 large strawberries.
Honeydew Melon
About 1 cup honeydew melon chunks.
Fresh Mint
Need about 6-8 fresh mint leaves, depending on the size.
Orange Juice
Need about ¼ cup fresh orange juice.
Honey
2-3 tbsp honey or maple syrup. I added honey.
Desiccated Coconut
Sweet or unsweetened, it is your choice. I would have preferred adding fresh coconut slices but it is difficult to get fresh coconut.

Ingredients
1cuppineapple chunks
1cupblueberries
1cupraspberries
1cuphoneydew melon
4-6 largestrawberries
2tbsphoney | maple syrup
6-8leavesfresh mint
2-3tbspdesiccated coconut
¼cuporange juicefresh
Instructions
Cut the pineapple and honeydew melon chunks into smaller pieces.
Add to a mixing bowl.
Wash the berries.
Cut the strawberries into smaller pieces.
Add the raspberries and blueberries.
Add the honey, orange juice.
Chop the mint and add.
Add desiccated coconut and mix the salad well.
Allow the salad to chill a bit in the fridge. I leave it for about an hour.
Serve as it is or with some vanilla ice cream.
Notes
Add fruits of your choice. Can make a pineapple salad on its own.
Add a dash of alcohol like rum, bourbon or vodka.
Add any sweetener of your choice. I like the flavour of honey or maple syrup.
Try adding some fresh basil instead of mint.
