EVENT: A-Z RECIPE CHALLENGE
First of all let me wish all you wonderful Mothers out there a very Happy Mothers Day. Its a day of mixed feelings for me as I miss my mum so much and at the same appreciate the fact that she touched my life in uncountable way.

To celebrate this special day, my recipe for today is Apple Crumble Cheesecake. This is my first contribution for a new group I have joined (yes talk about me being gullible and over enthusiastic about these group cooking challenges). This group is called A-Z recipe Challenge.Every two months we prepare a dish according to the alphabet and post the link on the group Facebook page. The names should not be adjectives like awesome, amazing, etc. The initiators of this group are fellow bloggers Jolly Makkar and Vidya Narayan.
When it comes to desserts I love cheesecake and I love any apple dessert. I wanted to combine the two to make a dessert just fit for celebrating Mother’s Day, a treat for myself as my kids are too far away to treat me. Getting hubby dear to make a special treat is another story all together. His treat for me was to make tea and give me a banana and apple as my my breakfast :0 Can’t complain can I????
Most apple flavored cheesecakes are baked. I’ve tasted baked cheesecake twice and can’t say I love it or even hate it. I wanted the kind where I don’t have to bake it, cool and all that. I improvised and made a easy peasy no bake apple crumble cheesecake. Let me warn that you’ll totally miss out noticing the layer of crumble at the bottom as I didn’t realize that the glasses I used are not the best to show off the bottom bit of the dessert. I’d got these really cute glasses as a present from a friend when I met her in Mumbai last December but unfortunately I had to leave them behind as my bag was just too full. Missing those glasses!
Let’s get straight to the easy recipe.
APPLE CRUMBLE CHEESECAKE
Makes 4
For the caramel apple topping:
2-3 medium green apples or red
1 tbsp brown sugar
1 tbsp lemon juice
1 tbsp butter
½ tsp cinnamon powder
For the crumble layer:
½ cup oats
¼ cup plain or wheat flour
2 tbsp brown sugar
1 tbsp butter
½ tsp cinnamon powder
For the cheesecake:
1 cup (approx 200g) cream cheese
1 cup whipping cream
¾ -1 cup powdered sugar
1 tsp vanilla extract
Preparation of the caramel apple:
- Peel, core and dice the apples into small pieces.
- Add lemon juice and mix it well.
- Add chopped apples, butter and sugar into a pan.
- Cook the apples over low heat till they are soft.
- Add cinnamon powder and mix well.
- Let the apple mixture cool down completely.
Preparation of the crumble:
- Preheat the oven to 150°C.
- Mix oats, flour, cinnamon powder and sugar.
- Add butter and rub it into the mixture.
- Spread this crumble mixture on a baking tray.
- Bake in the oven for 20-25 minutes till the mixture is crunchy.
- Let it cool completely.
Preparation of the cheesecake:
- Add whipping cream and sugar into a big bowl.
- Whip it till it forms soft peaks.
- In another bowl whip cream cheese and vanilla extract together till it becomes smooth.
- Add the whipped cream to the cream cheese and whip to mix.
Final Preparation:
- Divide the baked crumble between 4 glasses or bowls.
- Top each on with the cheesecake mixture. Use a spoon and icing bag.
- Add the caramel apple layer.
- Chill the cheesecake for 2-4 hours or till it sets.
- Serve chilled.
Tips:
- I like using green apples for desserts. You can use red ones too.
- Replace the crumble layer with crushed oat cookies.
- Make this cheesecake in a 6-7 inch cake tin. To set the crumble layer you may need add more butter.
