Recipe: Cherry Cobbler Parfait
Cherry Cobbler Parfait is a much easier version of a cherry cobbler. This parfait is perfect for breakfast, brunch or dessert. The cherries are cooked a bit to create a sauce. Greek Yogurt and granola are added to this parfait.

I first made this parfait on 17/05/2017 in Mombasa. Cherries are not easily available in a small town like Mombasa. And if available, they are frightfully expensive. However, I hunted for some cherries which come all the way from South Africa because of the Cherry Cobbler theme for the group Fantastical Food Fight group. $29 for ½kg cherries ! I walked out of the shop without buying them. After a couple of days I went to shop again and this time they were on sale as they were too ripe. But the price was $25! I bought 250g as I was allowed to pick the better cherries.

It is cherry season and I no longer have to worry about cherries being too expensive. Right now plenty of cherries are available and not frightfully expensive. Therefore thought of redoing the old post with better write up and photos too.

Ingredients Required For Cherry Cobbler Parfait
Cherries
Cornflour | Cornstarch
We need a bit to thicken the cherry sauce.
Maple Syrup | Honey
Water
Need about ¼ cup normal tap water to prepare the cherry sauce.
Oats
Quick or old fashioned oats to prepare the cobbler topping.
All Purpose Flour | Wheat Flour
Can use plain flour, all purpose flour or wheat flour to prepare the cobbler topping.
Butter
I have used salted butter. We need soft butter for the cobbler topping.
Brown Sugar
To add some to the cobbler topping.
Greek Yogurt
Plain Greek Yogurt is what we will be using for this parfait. If you don’t have Greek Yogurt, use normal plain yogurt. Remove the extra water from the yogurt by straining it in a cheese or thin cotton cloth. Cover a strainer or big sieve with a clean cotton cloth.I like to use gent’s handkerchief for this purpose as it’s just the right size. Pour the yogurt in the handkerchief. Cover with the edges of the hankerchief. To make the process a bit fast, fold a few of kitchen roll | paper towels and place it over the covered yogurt. Place something heavy on it like a pestle and mortar or a small brick or stone. This presses the yogurt down and the paper absorbs the water.
Vanilla Extract
Adds flavour to the parfait. Can add also some lemon zest if you wish.
Cinnamon Powder
Adds a lovely earthy flavour.
Clove Powder
Adds some warming flavour.
Almonds
Roughly chopped or flakes. Can replace the almonds with any nuts of your choice. We will be adding some as a topping.
Lemon Juice

CHERRY COBBLER PARFAIT
Ingredients
- 250 g fresh cherries
- 2 tbsp maple syrup | honey
- 1 tsp cornflour corn starch
- ¼ cup water
- 2 tbsp lemon juice
- ¼ cup oats
- 2 tbsp flour
- 2 tbsp butter salted
- 2 tbsp brown sugar
- ½ tsp cinnamon powder
- ¼ tsp clove powder
- 1 cup plain greek yogurt
- 1 tsp vanilla essence
- 2 tbsp maple syrup | honey
- 2-3 tbsp almond flakes
Instructions
PREPARE THE CHERRY SAUCE | FILLING
- To prepare the cherry filling wash and pit the cherries. Cut them into halves.
- Mix cherries, 1 tsp sugar, water and cornflour in a heavy bottomed pan.
- Cook the mixture over low heat till the cherries become a bit soft and the syrup becomes thick.
- Add the lemon juice. Mix well.
- Cool the mixture and store in the fridge till required.
PREPARATION OF THE COBBLER TOPPING | BISCUIT
- Preheat the oven to 180°C.
- Mix flour, oats, brown sugar, butter, cinnamon and clove powder together.
- Put the mixture on a lined baking tray.
- Bake it for 10-12 minutes. After 8 minutes keep an eye on the cookie mixture,you don't want it to burn.
- Take it out of the oven and let it cool.
- Crumble up the baked mixture. If not using it immediately, then store it in an airtight container.
PREPARATION OF THE GREEK YOGURT
- Add the Greek Yogurt in a mixing bowl.
- Add vanilla extract, maple syrup or honey.
- Mix it well. Let it chill in the fridge till the topping and sauce have cooled down.
TO ASSEMBLE THE CHERRY COBBLER PARFAIT
- Take 3 glasses.
- Add 2-3 tbsp of Greek Yogurt to all 3 glasses.
- Top it with the cherry sauce, about a tablespoonful each.
- Sprinkle the cobbler topping or biscuit crumbs.
- Add the remaining yogurt to the glasses.
- Add the remaining cherry sauce.
- Sprinkle the cobbler topping.
- Finish off by sprinkling some almond flakes.
- Allow the parfait to chill in the fridge for an hour.
- Serve it for breakfast, brunch or dessert.
Notes
- You can use normal plain yogurt but remove the excess water by straining the yogurt in a cheese cloth or a fine sieve.
- If you don't want to make the oat flour topping or crumble then just break up your favourite cookies and use that instead.
- You can use ready made cherry filling, but again the sugar content may be high.
- Use quick or old fashioned oats for the cobbler topping.
