What is Buttered Masala Sweet Corn?

Buttered Masala Sweet Corn is one of the easiest snacks to prepare. Its simply sweet corn that is boiled or steamed mixed with butter and spices. Can you use canned sweet corn to make this snack? Yes you can, just warm it up in a microwave oven or in a pan. When sweet corn is in season I prefer to buy the sweet corn, boil it and keep the kernels ready in the fridge to prepare a quick and healthy snack. Better than fried snacks.

Salted or Unsalted Butter?

The choice is yours, use whichever one you have at home as you can easily adjust the amount of salt added to the snack. I have made this snack using Olive Oil, it doesn’t taste bad but I still crave for the buttery one.

I love Sweet Corn

Whenever sweet corn is in season, I like to use it practically everyday in different dishes. I’ve added sweet corn to cornbread and it tastes delicious. A Black Bean and Corn Salad makes a wonderful light meal with a few tortilla chips. To ward off the cold I love to make Corn Potato Cheddar Soup. Add it to your toasted sandwich like a spinach paneer corn sandwich which I serve with a simple salad or soup. From the Swahili Cuisine, my all time favorite is corn coconut curry (makai ya nazi). Needless to say, Corn Curry features on our menu often during the corn season.

First Taste of Buttered Masala Corn

Don’t get me wrong, during the corn season my mum would boil the corn in salted water, slather butter over it and we’d enjoy it with melted butter trickling through our fingers down to our arms. Messy, but so enjoyable. However, sweet corn kernels with butter and spices served in a little paper cup was enjoyed for the first time in Bangalore at PVR Cinema, Forum Mall when I went to watch a movie with my daughter. The hot corn with pepper and drizzled with lemon juice was so delicious. I had to go a second round during interval. After a few months visit to London and get to enjoy Buttered Corn with pepper and lemon again.  BroadWalk Mall near my dad’s home has a small stall selling sweet corn with your choice of spices.

What Spices Can Be Added?

The choice is yours. Butter and Lemon or Lime juice is always there. Its the change in spices that makes it into a different snack. Here are some suggestions:

  • pepper
  • cayenne pepper
  • paprika powder
  • garam masala
  • ready made chat masala (mixture of tangy spices)
  • cajun spice mix
  • Italian herb mix
  • Lime Coconut mixture
  • Honey and Chill Flakes
  • Parmesan and dried herbs of your choice
  • Chilli, cilantro and cheese
  • Honey and Cinnamon

What is Masala?

When people from the Indian Sub Continent refer to masala it usually means a spice or a mixture of spices. The word masala before a dish name or food ingredient would indicate that it contains one or several spices.

Kernels or Corn on the Cob?

It really doesn’t matter how you serve buttered sweet corn, kernels only or in the cob form. The spices suggested can be used for both. For corn on the cob the hot boiled corns are served immediately with butter and other toppings of your choice. You may want to check out how my friend Preethi serves  spiced parmesan cheese corn.

What is the group all about?

Buttered Masala Sweet Corn is my all time favourite snack to go to whenever I feel hungry in between meals. Sometimes I replace the butter with little olive oil. While the recipe remains the same, I’ve updated the writing and photos.

My buttered masala sweet corn

My preparation is pretty simple using just two spices, red chili powder and pepper powder. However, you can play around with spices of your choice and make the sweet corn snack according to your taste or your family’s preference.

Dietary Tips:

BUTTERED MASALA SWEET CORN
2 Servings

2 cups cooked sweet corn kernels
2 tsp butter
½ tsp pepper powder
½ tsp salt
½ to 1 tsp red chilli powder or chilli flakes
1 to 2 tbsp lemon/lime juice

  1. Heat the butter in a pan over gentle heat. You don’t want it to get burnt.
  2. When it melts, add the corn and stir.
  3. When the corn becomes hot add the salt, pepper, lemon juice and chilli flakes or powder.
  4. Mix well and serve immediately.
Tips:
  • Make sure the sweet corn is fresh and milky. Dried ones or hard ones do not taste good.
  • Can use frozen sweet corn.
  • Can make this snack in the microwave oven.
