Armenian Jajukh Salad is a refreshing, healthy, easy to make, five ingredient Cucumber and Yogurt Salad. You may ask ” what is different about this salad?” Well, for one traditionally Armenian Cucumbers are used if available and secondly you have add ice cubes. Yes you heard right ice cubes in a salad. And trust me you will land up eating the whole salad by yourself. I did! Jajukh or Jajuk is quite different from the Greek Tzatziki, which is a dip and much thicker. A bit different from the Indian Cucumber Raita as the yogurt is not watery and no spices are used.

We’ve come to Letter J for this Alphabet Challenge initiated by Wendy. I was hoping to make a South East Asian Jackfruit Salad but was not able to gather all the relevant ingredients in India. J is for jicama (which I don’t get here), jam, jelly, jasmine rice, jaggery, jalapeño, jaffa cakes, jollof, jambalaya, jalebi, jeera, jalfrezi, Java plum or jamun, etc.

While Armenian Cucumber is best for this salad, use whichever kind of cucumber is available in your area. I used Persian Cucumber. The advantage of using Persian or English Cucumber is that you don’t need to peel the skin as it is thin and edible and it doesn’t have large seeds.
Mint
Can use fresh or dried mint. If using dried mint, about 1 tsp is enough. Add chopped fresh mint according to your taste.
Yogurt
Plain thick yogurt. Not Greek yogurt but natural yogurt which is not watery.
Salt
Add according to your taste. Can add any salt of your choice. I used Himalayan Pink Salt as that is what I had in my pantry.
Ice Cubes
Need about 3-8 ice cubes depending on how big they are.

Ingredients
3smallcucumbers
1cupplain yogurtthick
¼-½ cupfresh mint
¼tspsalt
someice cubes
Instructions
Take a mixing bowl and add the yogurt.
Add salt and mix well.
Chop the mint finely. Use according to your taste. I have used ½ cup mint leaves.
Add to the yogurt and mix well.
If you don't have any fresh mint then add about 1 tsp dried mint.
Wash and wipe the cucumbers with a kitchen towel.
Trim the ends and slice them thinly with a sharp knife or mandolin.
Add the cucumber slices to the yogurt.
Mix well.
Leave the salad in a serving bowl or spoon it out into smaller bowls.
Add ice cubes. I used about 8 small ice cubes. Mix the salad.
Serve the salad immediately.
