ARMENIAN JAJUKH SALAD

Armenian Jajukh Salad is a refreshing, healthy, easy to make, five ingredient Cucumber and Yogurt Salad. Healthy, easy to make,cooling, refreshing and perfect for the summer season.

Ingredients
  

  • 3 small cucumbers
  • 1 cup plain yogurt thick
  • ¼-½ cup fresh mint
  • ¼ tsp salt
  • some ice cubes

Instructions
 

  • Take a mixing bowl and add the yogurt.
  • Add salt and mix well.
  • Chop the mint finely. Use according to your taste. I have used ½ cup mint leaves.
  • Add to the yogurt and mix well.
  • If you don't have any fresh mint then add about 1 tsp dried mint.
  • Wash and wipe the cucumbers with a kitchen towel.
  • Trim the ends and slice them thinly with a sharp knife or mandolin.
  • Add the cucumber slices to the yogurt.
  • Mix well.
  • Leave the salad in a serving bowl or spoon it out into smaller bowls.
  • Add ice cubes. I used about 8 small ice cubes. Mix the salad.
  • Serve the salad immediately.
