Recipe: Raspberry Mousse

Raspberry Mousse is so light, fluffy and easy to make. Super delicious, it is gelatin and agar agar free. Perfect gluten free dessert to enjoy and did I mention quick to put together.

Hubby is not too fond of raspberries because of bite from the seeds. He sometimes finds them a bit tart but I love the combined sweet and tart taste. Actually, I had made raspberry mousse bang in the coldest month of the year….February! I had got some fresh raspberries from the supermarket and decided to make the mousse to celebrate my 60th birthday with my family.

Back then, somehow the recipe didn’t get to the blog. I kept pushing it, today, tomorrow, etc till the whole passed by. When I saw that one of the theme’s for Sunday Funday Group is Gluten Free Desserts, fished out the recipe from my draft and the photos from the thousands stored in iCloud.

As the recipe is so easy to put together, I have made it several times and hopefully will be able to make it for my family reunion. Yup, meeting up with my kids, their spouses, grandchildren at my dad’s place in London. First time, we’ll all be there as a family. Usually, one is missing because of work or other commitments.

Ingredients For Raspberry Mousse

Fresh Raspberries – I have always used fresh ones. But am sure frozen ones will work too.

Whipping Cream – double cream. Beat it till it forms stiff peaks. This is an important step as the beaten cream gives it that light and fluffy texture.

Cream Cheese – plain.

Powdered Sugar – confectioners sugar, icing sugar. Alternately, can grind white sugar at home.

Orange Juice – preferably fresh. Just to add a bit of flavour and help to grind the raspberries to a smooth texture.

Lemon Juice – optional. If the raspberries are tart, then you can omit the lemon juice.

Vanilla Extract – for flavouring. Can replace it with lemon zest.

Ingredients

  • 1 cup raspberries fresh
  • 2-3 tbsp orange juice fresh
  • 1 tsp lemon juice
  • 1 cup cream cheese
  • 1 cup fresh cream
  • ¼ cup powdered sugar
  • 1 tsp vanilla extract

TOPPINGS:

  • fresh raspberries
  • white chocolate or dark chocolate
  • whipped cream

Instructions

  • In a blender jug, add raspberries, orange and lemon juices.
  • Process to a a smooth consistency.
  • Add the powdered sugar and cream cheese. Process till the mixture is smooth.
  • Add whipping cream and vanilla extract in a mixing bowl. Beat till it forms stiff peaks.
  • Add the raspberry mixture to the whipped cream. Fold in gently.
  • Divide the raspberry mousse mixture between 4-6 individual bowls, cups or glasses.
  • Cover them with some cling film.
  • Put them in the fridge to set for about 2 hours.
  • Serve topped with some fresh raspberries, white chocolate or simply fresh mint leaves.
