Mum's Vegetable Soup is an easy to make soup without any oil, dried herbs, or spices besides pepper powder. Its one of the healthiest, nutritious and comforting soups that I enjoy. All you need are fresh vegetables like peas, potato, cauliflower, carrot, tomato, French beans and fresh corn if available.
4cupsof mixed diced vegetablespeas, carrot, potato, cauliflower, fresh beans, corn if available
1 tomato finely chopped
3cupswater
1tspsalt
½ - 1tspcoarsely ground pepper
Instructions
The vegetables should be diced small and not into big chunks.
Put the water, vegetables, tomato and salt in a pressure cooker.
Cook for 1 whistle. If you don't have a pressure cooker, then simmer it over medium heat till the vegetables are done.
Add pepper just before serving.
Notes
Can add a ¼ cup of chopped fresh coriander before serving.
I sometimes add about ½ cup of pasta along with the vegetables before cooking. This way I could get the kids to have the soup especially when they were sick.
