EGGPLANT MINI PIZZA

Eggplant pizza is a fun and healthy way to enjoy the flavors of a pizza without any guilt. Add any toppings of your choice.

Ingredients
  

  • 1 large eggplant or 2 medium size ones approx 500g
  • 1 cup mozzarella cheese grated
  • ¾ cup pizza sauce/ marinara sauce

TOPPING SUGGESTIONS

  • 1 small onion sliced thinly
  • 10 -12 cherry tomatoes cut into thick slices
  • 8 olives cut into slices
  • 6- 8 mushrooms sliced
  • cubed paneer
  • ½ cup sweet corn
  • colored peppers diced
  • few fresh basil leaves and/or dried herbs
  • ½ tsp salt
  • 1-2 tbsp olive oil
  • ½ -1 tsp chilli flakes

Instructions
 

  • Preheat the oven to 180°C. Line a baking tray with foil or grease it lightly with oil.
  • Trim the stalk off the eggplant. Cut it into 4 thick slices lengthwise.Each slice should be about ½ inch thick.
  • 2 slices will have a curved bottom. Slice it slightly to make it sit well on the tray.
  • Place the eggplant slices on the tray.
  • Brush oil over it.
  • Sprinkle salt over the slices.
  • Bake the slices for 10 minutes.
  • Remove the tray with the slices from the oven.
  • Spread the pizza/marinara sauce over the slices.
  • Sprinkle the cheese over the sauce.
  • Top it with your favorite topping.
  • Sprinkle chilli flakes and dried herbs.
  • Bake for 15-20 minutes or till the eggplants are done and the cheese has melted and is bubbling.
  • Top with fresh herb of your choice and serve immediately.

Notes

Make sure that the eggplant slices are not thicker than ½ inch or else it will not bake well. 
Use the big variety of eggplants for best results.
Add cheese of your choice.
The knife should cut through easily if the eggplant is done.
To serve as finger food, cut the brinjal into round slices.
