BEETROOT TOMATO SOUP

Beetroot Tomato Soup is a comforting, easy to make and healthy soup. With some warm spices, it is perfect for the cold season. With the weather so unpredictable at the moment, snow, rain, wind chills, storms, etc soups are so comforting and definitely warm up the body and soul.

Ingredients
  

  • 2 medium beetroots
  • 2 big tomatoes
  • 3 cups water/stock
  • 1 small onion
  • 1 large carrot
  • 2-3 cloves garlic
  • 1 tsp orange zest
  • 1 tsp cumin powder
  • ½ tsp cinnamon powder
  • ¼ tsp clove powder
  • ¼ tsp red chilli powder
  • 1 tsp salt
  • ¼ tsp pepper powder
  • 1 tbsp ghee/butter
  • 1 tsp fresh ginger minced

FOR TOPPING:

  • 2 tbsp fresh cream | coconut cream

Instructions
 

  • Peel and cut the beetroot, carrot, onion and garlic into chunks.
  • Chop the tomatoes too into chunks.
  • Heat ghee/butter in a pan over medium heat.
  • Add onion and garlic. Stir fry for about 1-2 minutes.
  • Add beetroot, carrot, tomato, ginger and orange zest.
  • Stir the vegetables and cover the pan with a lid. Let it cook for 2-3 minutes.
  • Add 3 cups water or stock.. Mix well. Cover the pan.
  • Cook till the vegetables are tender.
  • Use a hand held blender, puree the vegetables to a smooth consistency.
  • Alternately use a blender.
  • Add  cumin, clove, cinnamon, pepper and red chilli powder. Add salt according to your taste. Simmer over low heat till it becomes hot.
  • Garnish with fresh cream or coconut cream and serve.

Notes

  • If you don't want to add chilli powder, omit it.
  • Serve with some bread.
  • Add a bit of lemon juice for a different taste.
  • For a different taste omit the spices and add mint.
