AVOCADO TOMATO SANDWICH

Avocado Tomato Sandwich is a filling, delicious and healthy meal option especially for days when you don't feel like cooking in summer. Best time to enjoy those fresh juicy tomatoes.

Ingredients
  

  • 4 slices bread big
  • 1 medium avocado
  • 1 large tomato
  • ¼ cup feta cheese
  • 1 cup salad leaves
  • 2 tbsp fresh herb of your choice
  • 1 tbsp lemon juice
  • ½-1 Jalapeño
  • ½ tsp salt
  • ¼ tsp pepper powder

Instructions
 

  • Chop the fresh herb you use. Can use cilantro, basil, mint, parsley.
  • Finely chop the jalapeño.
  • Cut the avocado into half. Remove the seed.
  • Scoop out the avocado into a small mixing bowl.
  • Mash the avocado lightly with a fork.
  • Add the chopped herb, jalapeño, lemon juice, salt and pepper powder.
  • Mix well. Keep on the side till required.
  • Slice the tomato.
  • Wash and pat dry the salad leaves.
  • Lightly toast the bread slices if you want to. I toasted them a bit.
  • You can choose to make closed or open sandwich.
  • Spread the avocado mixture over the four slices.
  • Layer it with salad leaves on 2 slices if you are making closed sandwich.
  • Top it with tomato slices.
  • Add some feta cheese.
  • If you are making closed sandwich then add the remaining slices of bread.
  • Serve immediately.

Notes

  • Choose any bread of your choice. Use panini, wraps, pita, croissants,etc.
  • Add any fresh herb of your choice. Can use parsley, mint, basil, cilantro/coriander.
  • Adding jalapeno is optional. Can replace with a green chilli.
  • Add cheese of your choice, like mozzarella, cheddar, swiss, halloumi, paneer, Goats cheese, etc.
