In the meantime get the nuts ready. Roast them lightly in a pan.
Coarsely grind the nuts separately. Mix them together. Add to the milk powder mixture.
Chop the cranberries. Add to the milk powder mixture.
Add raisins, nutemg and cardamom powder to the milk powder mixture.
Mix everything together.
PREPARATION OF THE SUGAR SYRUP:
Put sugar and water in a pan over low heat.
Stir the mixture till the sugar melts.
Let the syrup simmer over low heat till you get a one thread consistency. This takes less than 5 minutes.
Put a blob of syrup on a saucer. Let it cool for a few seconds.
Press it between your thumb and forefinger. If it forms a single short thread, the syrup is ready. Let it simmer a bit more if the one thread does not form.
Add the saffron when the syrup is ready.
PREPARATION OF MARBLE BARFI:
Add the milk powder mixture to the sugar syrup.
Mix well using a spatula.
Allow the mixture to cool just enough so that you're able to touch it.
Take about a tablespoonful of the mixture and press the mixture in yor fist to form a ball.
Repeat the above step with the remaining mixture.
ALTERNATE SETTING METHOD:
If you don't want to form the balls then set it in a tray.
Grease a 5" X 7" tray with ghee. Add the hot barfi mixture.
Spread the mixture out and level it using a spatula or a bowl or glass. Press it down gently.
When the mixture is a bit cool, cut into squares.
Allow the mixture to become cold completely before you remove the sqaures from the tray.
Notes
Use nuts and dried fruits of your choice.
If you are rolling the barfi into balls then make sure you don't allow the mixture to become cold otherwise it will become difficult to shape them.
Add chocolate chips if you like when the mixture is a bit cool.
