VEGETABLE RAITA | INDIAN YOGURT SALAD

Vegetable Raita is an easy to make Indian side dish or salad. Vegetables and a few spices are added to some plain yogurt to make this delicious dish. While you can use any vegetable of your choice, I have used tomato, cucumber and onion. You can also enjoy raita as a light meal.

- 1½ cup plain yogurt thick
- 1 cup cucumber finely diced
- 1 large tomato finely diced
- ¼ cup onion finely chopped
- 2 tbsp fresh coriander finely chopped
- 1 tbsp split mustard seeds optional
- 1 tsp sugar
- ½ tsp salt
- ½ tsp cumin powder
- 1-2 green chillis minced or sliced
- ¼ tsp red chilli powder
Add yogurt to a mixing bowl.
Add salt, sugar, cumin powder. green chilli, split mustard seeds, red chilli powder and whisk to mix it well.
Add the chopped cucumber, tomato, coriander and onion. Mix well.
Chill the yogurt for 30 minutes in the fridge before serving.
Enjoy raita with some biryani, with your favourite curry or as a light meal.
- Add vegetables of your choice like bell pepper, carrot, radish, beetroot, etc
- Add spices according to your taste.
- Make sure the yogurt is not watery. We need thick yogurt for raita.
- Add fresh mint too.
- Adding split mustard seeds is optional as not everyone likes the taste of it.
