Salata De Varza Rosie is a simple and yet flavourful Romanian Red Cabbage Salad. Easy to make, basically you need only a handful of ingredients. Some red cabbage or white (then it is simply called Salata De Varza), carrot, vinegar, salt and oil.

- ¼ red cabbage approx. 280g
- 1 medium carrot approx. 80g
- 1 medium apple
- 3 tbsp apple cider | white wine vinegar
- 3 tbsp oil any of your choice
- ½-¾ tsp salt
- ½ tsp black pepper powder
- 1 tsp dried dill optional
Using a mandoline or sharp knife, shred the red cabbage. Make sure you remove the other dry or limp leaves.
Add the salt to the shredded cabbage. Massage cabbage with your hand for about 2-3 minutes. This will help to soften the cabbage a bit.
Allow the cabbage to rest for about 10 minutes.
In the meantime peel and grate the carrot. I used a box grater.
Also cut the apple into half and core it. Grate the apple with or without the peel.
Mix the grated carrot and apple. Add and mix the vinegar so that the apple does not turn brown.
Add the apple carrot mixture to the shredded cabbage.
Add oil, dried dill and freshly cracked black pepper.
Mix the salad well. Cover and allow the salad ingredients to meld in the fridge for 30-60 minutes.
Serve the salad as a side with any dish of your choice.
- Can serve the salad immediately but we preferred it a bit soft so allowed it to rest in the fridge for 60 minutes.
- Adding herbs is optional. Add fresh or dried. Best to use parsley or dill.
- Use any oil of your choice.
- Add lemon juice for a more zesty taste.
- Use good quality vinegar for a flavourful salad.
