Pouding Chômeur also known as Poor Man's Pudding is a Quebecois classic which originated during the Great Depression. Maple sauce is poured over the cake batter and baked. Generally served warm with some vanilla ice cream or whipped cream.

FOR THE SAUCE
- 1 cup maple syrup
- 1¼ cup fresh cream
- ⅛ tsp salt
FOR THE CAKE
- ¾ cup all purpose flour
- 1 tsp baking powder
- ¼ tsp salt
- 4-6 tbsp sugar
- ¼ cup oil | melted butter
- ¼ cup milk
- 1 large egg
- ½ tsp vanilla extract
PREPARE THE MAPLE SAUCE
Add maple syrup, salt and fresh cream in a saucepan.
Place the pan over low to medium heat.
Whisk the sauce till it becomes hot.
Allow the sauce to simmer for 5 minutes or till it becomes a bit thick.
Remember to mix it frequently.
Allow the sauce to cool down a bit before adding to the cake batter.
BAKE THE CAKE
Preheat the oven to 180℃.
Grease a 8X8 Inch cake tin with some oil or butter.
Sift flour, baking powder and salt together.
In another mixing bowl add sugar, egg, vanilla extract, milk and oil or butter.
Whisk till everything is mixed well.
Add the flour mixture.
Fold it in gently. Don't over mix.
Pour the batter in the prepared tin.
Pour the maple sauce over the batter.
Bake the pudding for 25-30 minutes.
Insert a toothpick in the middle of the cake. It should come out clean.
Allow the pudding to cool down a bit.
Cut into squares. Serve topped with some vanilla ice cream or whipped cream.
