PESTO PASTA SALAD

Pesto Pasta Salad is one of the easiest, tastiest salad that one can enjoy as a light meal. Healthy and versatile, add any salad ingredients of your choice.

Ingredients
  

  • 2 cups pasta cooked
  • 1 tbsp olive oil
  • 1 medium cucumber
  • 18-20 baby tomatoes
  • ¼ cup olives
  • 6-8 small mozzarella balls | bocconcini
  • ½-⅓ cup pesto
  • ½ tsp red chilli flakes optional

Instructions
 

  • Add cooked pasta in a mixing bowl.
  • Add the olive oil and mix well.
  • Chop the cucumber into chunks or slices. Add it to the pasta.
  • Cut the baby tomatoes into halves. Add to the bowl.
  • Chop the mozzarella balls into halves or quarters and add to the salad.
  • Add the olives and red chilli flakes if using any. If you want to then slice them into halves.
  • Add the pesto and mix well. Salad is ready.

Notes

  • for a more creamy dressing, add 1-2 tbsp mayonnaise or sour cream to the pesto.
  • use any pesto sauce of your choice.
  • Add some olive oil to the cooked pasta so that it doesn't dry up and clump up.
  • Add any other salad ingredients of your choice, like sweet corn, bell pepper, peas, seeds, baby spinach, arugula, broccoli, etc.
