Pak Choi Noodle Soup is a comforting, filling, delicious soup that comes together within 20 minutes. Make it more wholesome by adding your choice of protein like chicken, fish, meat, tofu, eggs, etc.

Ingredients
  

INGREDIENTS FOR PAK CHOI NOODLE SOUP

  • 1 head pak choi
  • 1 small onion
  • 6 cloves garlic
  • 1 tsp ginger paste
  • ½ cup French Beans thinly sliced
  • ¼ cup bell pepper diced
  • 2 cup bean sprouts
  • 1 cup snow peas cut into halves
  • 3 cups vegetable stock
  • 50 g noodles
  • 1 tbsp oil
  • 1 tsp sesame oil
  • 1 tbsp soy sauce light
  • 1 tsp rice vinegar
  • ½ tsp salt
  • ½ tsp five spice powder
  • 1 tbsp chilli sauce
  • 1 cup tofu grilled
  • ½ tsp sesame seeds for serving

INGREDIENTS FOR CHINESE FIVE SPICE BLEND

  • 1 tsp szechwan/sichuan pepper
  • ½ tsp cloves
  • 1 inch cinnamon stick
  • 1 tsp fennel seeds
  • 1 star anise

Instructions
 

PREPARATION OF CHINESE FIVE SPICE BLEND

  • Lightly roast the spices in a pan over low heat till you get the aroma.
  • Let the spices cool and then grind in a spice mill or coffee grinder.
  • Store in an airtight jar.

PREPARATION OF PAK CHOI NOODLE SOUP

  • Wash the pak choi thoroughly and chop it into big chunks.
  • Peel and cut the onion into slices.
  • Peel and slice or mince the garlic.
  • Heat a deep pan over high heat.
  • Add oil and let it become hot.
  • Add onion and stir fry till it becomes a bit soft.
  • Add bell pepper, garlic and ginger. Stir fry for a few seconds.
  • Add the green beans and chopped snow peas. Stir fry for 1 minute.
  • Add the pak choi and stir fry for 1 minute.
  • Add the stock, salt, spice blend, vinegar, soy sauce and chilli sauce.
  • Allow the mixture to become hot but not boiling.
  • Add the noodles and cook for 2 to 3 minutes  or till the noodles are done al dente.
  • Add the bean sprouts and sesame oil. Mix well. Don't over cook the sprouts.
  • Add grilled tofu or protein of your choice.
  • Serve the soup immediately with sesame seeds sprinkled on top.

Notes

  • Store the remaining five spice powder in an airtight container. Can use it for other chinese dishes.
  • Prepare the soup just before serving to maintain the crispness of the vegetables.
  • Use chinese cabbage (napa cabbage) instead of pak choi.
  • Add  other vegetables of your choice.
  • Use good quality noodles and not the instant variety. I like to use egg noodles, flat noodles, udon, soba, etc.
  • Adjust spices and sauces according to your taste.
