Mix water and sugar in a heavy bottom pan and boil it till it becomes a thick syrup about 1 thread consistency.
To check for one thread consistency, after five minutes of boiling, place a small amount of syrup on a saucer. Take it with your finger and press it with your thumb. Open it. If you can see a string then thats one thread consistency. If you cant see the thread, let the syrup cook for a further few minutes.
Take the sugar syrup off the heat.
Preparation of the Chocolate Balls:
Sift cocoa powder and milk powder together in a mixing bowl.
Add the nut powder and mix well.
When the sugar syrup is ready add butter and vanilla extract. Mix well till the butter melts.
Add the milk powder mixture into the syrup.
Mix it well.
Let the mixture cool down a bit.
Line a tray with parchment paper.
Grease your hands with some butter and roll the mixture into balls. I usually take about a teaspoonful.
Place the rolled balls on the prepared tray.
Preparation of Melted Chocolate
You can put the chocolate chips in a microwaveable bowl and melt it in the microwave.
I prefer to melt it over hot water.
Place the chocolate chips in a heatproof bowl that just sits at the mouth of a saucepan.
Add about 2 inches deep of water in the saucepan and bring it to a boil.
Place the bowl with chocolate over it and mix till the chocolate melts.
Coating the Chocolate Balls:
Place one rolled ball into the melted chocolate.
Using a fork remove the ball from the melted chocolate. Tap the fork against the bowl to remove excess chocolate.
Place the coated ball on the tray.
Repeat the above steps with the remaining balls.
Sprinkle your topping over them.
Put the tray in the fridge till the chocolate sets.
Notes
Don't have time to roll the balls. Then just pat it down into a greased and parchment lined tray. Pour the melted chocolate over it. Cut into squares.
For nut free chocolate, replace the nut powder with milk powder.
