CHOCOLATE AVOCADO PUDDING

Chocolate Avocado Pudding is a decadent, creamy, easy to make, free from refined sugar and protein rich dessert. It makes a good healthy and filling dessert. Or enjoy it for breakfast.

- 1 medium avocado ripe
- 2-4 tbsp maple syrup
- 2 tbsp cocoa powder unsweetened
- 1 tsp orange zest
- ¼ cup Greek Yogurt plain
- ⅛ tsp salt
- 2 tsp chia seed powder
To Serve:
- 2 tbsp mixed nuts chopped
- some fresh fruit
Cut the avocado into half, remove the seed.
Scoop the flesh and add to a blender jar.
Add Greek Yogurt, cocoa powder, maple syrup, salt, chia seeds and orange zest.
Process the mixture to a smooth consistency. You may need to use a spatula to mix the avocado mixture to help it process well.
If required can add a bit of milk or water. It will depend on how powerful your blender is.
Scoop out the pudding into 2 serving bowls or small glasses. Cover it with cling film.
Refrigerate the pudding for 30- 60 minutes.
Top the Chocolate Avocado Pudding with chopped nuts and fresh fruit of your choice.
- Add a small banana for a much thicker creamier pudding.
- Add flavourings or spices of your choice.
- For vegan option use maple syrup instead of honey and nut milk of your preference.
- Serving the pudding with nuts and fresh fruit is totally optional.
