AVOCADO, TOMATO & FETA SALAD

vocado, Tomato & Feta Salad is so easy to put together, delicious and a healthy meal on its own or as a side dish. Feta pairs so well with both avocado and tomato. This is my favourite summer time salad especially when a variety of tomatoes are in season.

2 small avocados 1 cup baby tomatoes or 2-3 roma tomatoes ½ cup feta cheese crumbled or cubed 2 cups salad greens 10-12 mint/basil leaves 2 tbsp sunflower seeds lightly roasted 1 tbsp lemon juice ¼ tsp salt ½ tsp pepper powder 2 tbsp olive oil
Peel the avocados and cut into chunks or thick slices. Add the lemon juice and mix gently.
Cut the tomato into chunks or thick slices. If using cherry or plum tomatoes cut into half.
Add the salad leaves, herb leaves and sunflower seeds.
Toss the salad.
Add salt, pepper and feta cheese.
Toss.
Drizzle olive oil over it and serve.
Adjust the amount of avocado and tomatoes used according to your preference.
Replace feta with halloumi, cottage cheese, paneer, cotija, etc.
Add a dressing of your choice if you want to. Sometimes I add balsamic vinegar dressing.
Use salad leaves of your choice.
If you want to serve the salad chilled then don't add salt. Add just before serving.
