AVOCADO MINT LASSI

Avocado Mint Lassi is a savoury based yogurt drink. Delicious, creamy and filling too. Enjoy it with a meal or on its own as a healthy snack.

Ingredients
  

  • 1 small avocado approx 1 cup chopped
  • 10-12 mint leaves fresh
  • 1 cup plain yogurt thick
  • 1 clove garlic
  • ½ cup water
  • 1 green chilli slit and remove the seeds, optional
  • ¼ tsp salt

Instructions
 

  • Wash the avocado thoroughly. Cut into half and remove the stone.
  • Peel it and scoop or roughly chop the flesh of the avocado.
  • Wash the mint leaves properly.
  • Add all the ingredients into a blender jug.
  • Blend till you get a smooth and thick creamy consistency.
  • Pour the Avocado Mint Lassi into serving glasses.
  • Chill  the lassi for 30 -60 minutes in the fridge or serve it with crushed ice cubes.

Notes

  • Replace mint with coriander if you want.
  • Can totally omit adding chili.
  • Use good quality yogurt, you don't want it to be too sour.
  • I prefer to chill the lassi before serving.
