Avocado Mint Lassi is a savoury based yogurt drink. Delicious, creamy and filling too. Enjoy it with a meal or on its own as a healthy snack.

- 1 small avocado approx 1 cup chopped
- 10-12 mint leaves fresh
- 1 cup plain yogurt thick
- 1 clove garlic
- ½ cup water
- 1 green chilli slit and remove the seeds, optional
- ¼ tsp salt
Wash the avocado thoroughly. Cut into half and remove the stone.
Peel it and scoop or roughly chop the flesh of the avocado.
Wash the mint leaves properly.
Add all the ingredients into a blender jug.
Blend till you get a smooth and thick creamy consistency.
Pour the Avocado Mint Lassi into serving glasses.
Chill the lassi for 30 -60 minutes in the fridge or serve it with crushed ice cubes.
- Replace mint with coriander if you want.
- Can totally omit adding chili.
- Use good quality yogurt, you don't want it to be too sour.
- I prefer to chill the lassi before serving.
