APPLE CINNAMON MUFFINS, EGG FREE

These Apple Cinnamon Muffins are egg free, easy to bake, super delicious, aromatic and loaded with apple chunks. Though you can omit the topping of melted butter, sugar and cinnamon, I highly recommend that you use them. Makes these rustic muffins perfectly buttery and flavourful.

FOR THE APPLE CINNAMON MUFFIN BATTER 2 cups plain flour all purpose flour 2 cups diced apple approx 190g ½ tsp cinnamon powder ¼ tsp nutmeg powder optional ½ cup plain yogurt thick ½ cup milk ½ cup butter melted 1 tsp vanilla extract ½ cup brown sugar ¼ cup white sugar 1½ tsp baking powder ½ tsp baking soda ¼ tsp salt FOR THE TOPPING 3 tbsp butter melted 2 tbsp white sugar 1½ tsp cinnamon powder
Preheat the oven to 200°C.
Apply and smear muffin tray with some butter.
Add 2 tbsp of the measured flour to the diced apples. Toss to mix. This will coat the apples with the flour.
Sift flour, baking powder, baking soda and cinnamon powder together in a mixing bowl.
In another bowl whisk yogurt, vanilla extract, sugar, salt, melted butter and milk together.
Add the dry ingredients to the wet ingredients and mix just enough to wet the dry ingredients.
Add the diced apples. Mix gently.
Spoon the batter ¾ of the way into the prepared muffin tray.
Bake for 5 minutes at 200℃.
Then lower the temperature to 180℃ and bake further for 20-25 minutes or till the top of the muffins appears light golden brown.
Insert a tooth pick into the muffin. If it comes out clean then the muffins are done.
Cool the muffins in the tray for 5 minutes.
Then transfer them to a wire rack.
Let them cool on a wire rack completely.
ADD THE TOPPING Melt 2 tbsp butter. I melt it in the microwave oven for 15-20 seconds. Keep an eye as you want the butter to just melt and not simmer.
Mix the 2 tbsp white sugar and 1½ tsp cinnamon powder.
Apply melted butter over a muffin.
Dip the top in the cinnamon sugar mixture.
Repeat the same with the remaining muffins.
Enjoy apple cinnamon muffins for breakfast, as a snack or dessert.
It tastes good served with a dollop of vanilla ice cream.
Use any apples of your choice.
Grind the cinnamon freshly for best aroma and flavor.
I would recommend using butter for this muffin recipe as it tastes really good with the cooked apples.
Make sure the yogurt is not watery.
