CARROT BLISS BALLS

Carrot Bliss Balls are soft, sweet, delicious, nutritious and healthy. Ideal for kids parties, picnics, as a snack, for lunch boxes and as energy boosters.

Ingredients
  

  • 250 g carrots
  • 200 g pitted dates (1 cup tightly packed)
  • ¼ cup pumpkin seeds
  • 1 cup cashew nuts (approx. 150g)
  • ½ cup oats
  • ½ cup desiccated coconut unsweetened
  • 1 tsp cinnamon powder
  • ½ - 1 tsp ginger powder
  • 1 tsp turmeric powder

COATING OPTIONS

  • some desiccated coconut
  • some cocoa powder
  • some grated dark chocolate
  • some sesame seeds roasted

Instructions
 

  • Wash, peel and chop the carrots into chunks.
  • Add the chopped carrots to the food processor.
  • Process till you get finely minced carrots.
  • Add dates, desiccated coconut, nuts, pumpkin seeds, oats, cinnamon powder, ginger powder and turmeric powder.
  • Process the mixture till it becomes like a paste.
  • Take about a tablespoon of the mixture and roll it into a ball.
  • Repeat the above step with the remaining carrot date mixture.
  • Add the coating of your choice into a small plate or saucer.
  • Roll the balls in the coating.
  • Arrange the carrot bliss balls on a tray and allow them to chill in the fridge for one hour or so.
  • Serve when required.

Notes

  • Can leave the carrot bliss balls uncoated if you wish.
  • Use a coating of your choice.
  • Add ginger powder according to your taste.
  • Store the bliss balls in an airtight container in the fridge till required.
  • These carrot bliss balls will stay fresh in the fridge for at least a week.
