COCONUT CHOCOLATE

Coconut Chocolate - tastes like Bounty Chocolate but its homemade. Easy to make and makes a delightful gift for any occasion. Or prepare it for festivals to share with friends and family.

Ingredients
  

FOR THE FILLING:

  • ½ cup milk powder
  • cup desiccated coconut
  • ½ tsp vanilla extract or peppermint essence
  • cup icing sugar
  • 3 tbsp milk

FOR THE COATING:

  • 1 cup icing sugar
  • ½ cup drinking chocolate
  • ½ cup cocoa powder
  • ¾ cup milk powder
  • 2 to 3 tbsp fresh milk
  • ½ tsp lemon juice
  • some butter for greasing

Instructions
 

PREPARE THE FILLING:

  • Sieve the milk powder and icing sugar into a big bowl.
  • Add the desiccated coconut and mix well.
  • Add essence to the milk and mix. Add to the coconut mixture and form a dough.
  • Take about ½ tsp of the filling and roll into a ball.

PREPARE THE COATING:

  • Sieve the icing sugar, milk powder,cocoa powder and drinking chocolate into a bowl.
  • Add the lemon juice and milk and form into a dough.

PREPARE THE CHOCOLATE:

  • Divide the dough into parts according to the number of coconut balls you have made.
  • Grease your hands a bit and press one part of the filling dough into a small circle.
  • Place the coconut ball on top of  the coating mixture.
  • Cover the coconut ball completely with the coating.
  • Roll gently to make a smooth ball.
  • Place on a greased tray.
  • Repeat with the remaining filling and coating.
  • Put in the fridge if you stay in a hot and humid place.

Notes

Add essence or extract of your choice.
Add more milk to the coating if the dough cracks while rolling.
The chocolate keeps well for a month in the fridge.
When I made these in US I noticed that the coconut was a bit dry. I added some more milk and allowed the filling to rest for a while.
