Raspberry Mousse is so light, fluffy and easy to make. Super delicious, it is gelatin and agar agar free. Perfect gluten free dessert to enjoy and did I mention quick to put together.

1 cup raspberries fresh 2-3 tbsp orange juice fresh 1 tsp lemon juice 1 cup cream cheese 1 cup fresh cream ΒΌ cup powdered sugar 1 tsp vanilla extract TOPPINGS: fresh raspberries white chocolate or dark chocolate whipped cream
In a blender jug, add raspberries, orange and lemon juices.
Process to a a smooth consistency.
Add the powdered sugar and cream cheese. Process till the mixture is smooth.
Add whipping cream and vanilla extract in a mixing bowl. Beat till it forms stiff peaks.
Add the raspberry mixture to the whipped cream. Fold in gently.
Divide the raspberry mousse mixture between 4-6 individual bowls, cups or glasses.
Cover them with some cling film.
Put them in the fridge to set for about 2 hours.
Serve topped with some fresh raspberries, white chocolate or simply fresh mint leaves.
