Stir fry literally means cooking tender vegetables or meat,  blanched vegetables, or boiled vegetables and meat in a small quantity of oil over high heat. This results in the vegetables becoming a bit crunchy and most of the nutrients is preserved. While some vegetables are easy to stir fry some need to be blanched for a while. What is blanching? Blanching is a cooking method where vegetables or fruits are added to boiling water, allowed to cook for a short time, removed from the hot water and immediately dipped in ice cold water.     crunchy and healthy It has been a long time since I have made stir fried vegetables at home. It was a common request by my father in law to make some of it along with fried rice and spring rolls.     Our visit to Nepal many years ago was a memorable one. I loved the country and the people were very friendly. Though we had gone there in the month of April, it was freezing cold. The place we stayed at had a very small basic kitchen. No fancy food was available there. Our first meal was momo soup.” What is momo?” I asked the cook.
