EVENT: FOODIEMONDAY/BLOGHOP THEME: #168 CHAAT PARTY FOR DIWALI With Diwali, the Festival of Lights, comes not only the poojas and visits to the temples but also party time. Years ago our Diwali was marked with what we back then called ‘jaman’ meaning a meal. Diwali jaman was always at our place and it would be the traditional Gujarati fare with Gur na ladwa, 1 green vegetable, 1 sabji with a gravy and potato sabji, with two farsans like kachori, samosa, arvi na paan or dhokra. And not forgetting the dal, rice, pickles, papad, salad. Though that was a lot of hard work trying to feed around 20 -25 people, we all would look forward to this auspicious day. Nowadays gone are the traditional jamans at…

EVENT: FOODIEMONDAY/BLOGHOP THEME: #166 STIR FRY Stir fries are one of the easiest meals to make. Stir fry literally means cooking tender vegetables or meat,  blanched vegetables, or boiled vegetables and meat in a small quantity of oil over high heat. This results in the vegetables becoming a bit crunchy and most of the nutrients is preserved. While some vegetables are easy to stir fry some need to be blanched for a while. What is blanching? Blanching is a cooking method where vegetables or fruits are added to boiling water, allowed to cook for a short time, removed from the hot water and immediately dipped in ice cold water. The way one cuts or chops the vegetables also makes a difference. Certain fish, prawns, shrimps…

MEGA BLOGGING MARATHON -SEPT 2017 #80TH BLOGGING MARATHON THEME: PROTEIN RICH DISHES DAY:12 Kenyans get affected by the elections whenever they come by every 5 years… more precisely in the past decade or so. People now have a voice and make their opinions known to the public. Kenya went through its elections in Aug and the ruling party Jubilee won. The opposition took the matter to the Supreme Court and it ruled in their favor and so re – election of the President will take place again on Oct 17th (a case of rigging votes). While I praise the judiciary system for being fair and just, I’m more concerned about how the economy comes to a sluggish pace during the election year. During this morning’s…

GUEST NO.7 ON THE BLOG         My 7th guest is my dear little sister Sapna.  Sapna is one of those type of people who does not like to take sides when two people fight. She never sided with either of us when my brother and I used to fight. She is a very dependable person and can juggle a series of chores in a jiffy. I have not spent that much time with my sister but whatever time I have spent with her is memorable. I’m so lucky to have a sister with whom I can share all my joys and sadness, distance makes no difference. She immediately will know how I will feel and I will get a comforting message from…

Shhhh cooking secretly# 1          I joined this group of enthusiast bloggers just recently. The initiator of this group is Priya of  Priya’s Versatile Recipes. She pairs members each month and they send each other two secret ingredients. We get a month to prepare the dish, be it a sweet or savoury one. The fun part is when fellow bloggers post the picture on the group’s facebook page and we have to try and guess the secret ingredients. Sometimes, the secret ingredients are obvious but most of the time very difficult to guess. The exciting part was waiting for the partner to give you the two ingredients. As soon as I got mine from Sandhya Ramakrishnan, broccoli and barley, the first thing that…

A bit of a drizzle and most of us in Mombasa presume that the cold season has begun. Its time to have hot bhajias, hot soup, any hot comfort food. On a serious note it never gets that cold in Mombasa to have those kind of urges. That does not mean we do not make soups and bhajias. We just set the air conditioner on a lower setting to feel cold! Fresh green broccoli is what I got from the market this week.  Broccoli is considered a superfood as its packed with many healthy benefits. Packed with natural soluble fiber it helps to control cholesterol. Its rich in Omega 3 fatty acids which act as anti inflammatory. Broccoli is said to help in reducing estrogen…

crunchy green emeralds    Rainy season means loads of fresh crispy vegetables. Thats what exactly hit me when I entered the famous Mombasa Vegetable market this week. Just couldn’t make up my mind as to what to buy. Wanted to buy the whole market. The deep green fresh broccoli kept on beckoning me to buy her, him? I can eat raw broccoli, blanched, in soup form but I hate boiled broccoli. So it was broccoli salad for dinner on that day. The recipe is very easy to make and a nutritious one. Go on make it, you will love it. updated :05/05/2016           BROCCOLI SALAD Serves 2 1 cup broccoli florets, bite size 4-6 lettuce leaves or any greens of your…

a baked delight   Baked cauliflower is a popular dish, but have you tried baked broccoli? Broccoli contains twice the  amount of Vitamin C compared to an orange. It is a rich source of folic acid, calcium, potassium. Rich in selenium, a mineral that has found to have anti cancer and anti viral properties. A good source of fiber, broccoli belongs to the cruciferous family i.e. in the same family as cauliflower, cabbage, mustard leaves, kale. I prefer using broccoli for this dish as opposed to cauliflower as it gives extra flavour and a bite. I usually use a mixture of olive oil and butter to make the sauce.  updated 27/01/2016                 BAKED BROCCOLI 2 Servings 2-21/2 cups…
