    May 6, 2019mayurisjikoni

EVENT: FOODIEMONDAY/BLOGHOPTHEME: #194 SUMMER FRUIT FEST This week’s theme was suggested by Swaty who blogs at Food – Trails. Swaty’s blog is full of fun recipes from appetizers to desserts. I love her photography. Check out her blog for some exciting delicious recipes. When Swaty suggested using summer fruits to create a recipe, I was happy as I was in the right place to enjoy really colorful summer fruits – Thailand. You’ll find many fruit vendors on the streets selling cut ripe mangoes, cut raw mangoes, water melons, dragon fruits, other melons, pineapples, peeled pomelo, durian, rambutan, rose apple slices, papaya, guava, coconut and longan. A really colorful smoothie bowl would have been the ideal recipe for this theme, but I couldn’t make the smoothie as…

EVENT: FOODIEMONDAY/BLOGHOP THEME: #149 SALAD Now that all the Eid festivities are over, its time to get back to some healthy food. Though we don’t as per say celebrate Eid, we just can’t help gorging on the goodies that Muslim friends send home. Usually its sweet stuff and a taste here and a taste there and before you know it, sweets are eaten after lunch and dinner. I don’t know whether its just me or does it happen to all of you, let go off  a regular diet and meal plan for a couple of days and I feel like I’ve added a ton of weight! Today, I just had to tell my maid to take all the sweets (mithai).. no more temptation. I’m probably…

  • 663.Baked Falafel Salad Bowl

    June 26, 2017mayurisjikoni

A fulfilling bowl Theme: Healthy Weekday Lunches BM#77 Week 4 Day 3    When its really hot and humid in Mombasa, the last thing hubby and I want for lunch is curries, parathas and rice. I try and make exciting salads which are filling and yet healthy. As I’ve mentioned before I like my salads to be as colourful as possible. I like falafel but having it with pita bread can be heavy on the stomach during the hot season. I hate frying food during the hot season and will only fry if I have guests over. I baked the falafel, but it was refusing to turn that nice golden colour. I didn’t want to keep on brushing more oil on it. However, the baked…

  • Moroccan Vegetable Soup

    November 7, 2016mayurisjikoni

After all the festivities… Navratri followed by Diwali, its time to avoid all the sweet stuff, the fired goodies and its time to get back to a normal, healthy diet. After the festivities and over indulgence ( I must admit I had quite a bit of chips with yogurt dip and fried wedges) our #FoodieMonday#Bloghop team decided that our #65theme should be #soups. I love soups, not so much the ready made ones but  the home made ones. Soups can be smooth and creamy, light and a bit watery or wholesome. I decided to prepare a wholesome soup, full of vegetables and lentils and with a hint of spiciness. You can literally make wholesome soups your meal. Just add the veggies, proteins and serve with…

I find that when I finally figured out blogger, I moved and now it takes me a while to get use to terms like plugins, widgets, etc. I try to figure out as much as I can and when I fail have to call my daughter. These days she too is so busy as she is managing quite a few freelance projects which also includes work for my son and daughter in law’s upcoming boutique hotel project The Elementum. She is also trying to promote her own Type.Social as a content creator. Do take a while to check out both the sites. I cannot believe that my babies are now…

  • avocado cheese salad

    August 28, 2012mayurisjikoni

I love adding cheese cubes , crumbled cheese , grated cheese to my salad. The day hubby sees cheese in the salad, he comments ” someone’s favourite is on the menu again!” Not that he wouldn’t eat the cheese, am sure he too loves it. Cheese makes the salad more fun…. can you imagine the mixture of different tastes…. its like music for the tongue. Enjoy this simple and lovely salad. Yes, avocados are still in season and not joking at all but now they are huge, they are actually the size of a hawaiian paw paw.  I am serious.  I’m sure you’ll love this salad as much as I love it. Its filling, different and loaded with all the essential nutrients required. You can…

  • savaa ni bhaji (dill and lentils)

    August 25, 2012mayurisjikoni

Prina my niece, loves savaa ni bhaji with rotli and so does her dada. Savaa, suva or dill leaves are prepared as a vegetable in India either with lentils or potatoes. It is a herb but grows in abundance in India during the rainy season and winter season. Big fat bunches sometimes sell for just under 10 rupees. My visit to the Mombasa market this week was a delight as I saw only one seller with a few bunches of the bhaji. I quickly grabbed a few and made the vegetable on the same day. This herb does not stay for too long as the leaves start to turn yellow within a day or two. I love savaa ni bhaji with the lentils but Ajay…
