• Stir Fried Vegetables with Orange Sauce

    October 15, 2018mayurisjikoni

EVENT: FOODIEMONDAY/BLOGHOP THEME: #166 STIR FRY Stir fries are one of the easiest meals to make. Stir fry literally means cooking tender vegetables or meat,  blanched vegetables, or boiled vegetables and meat in a small quantity of oil over high heat. This results in the vegetables becoming a bit crunchy and most of the nutrients is preserved. While some vegetables are easy to stir fry some need to be blanched for a while. What is blanching? Blanching is a cooking method where vegetables or fruits are added to boiling water, allowed to cook for a short time, removed from the hot water and immediately dipped in ice cold water. The way one cuts or chops the vegetables also makes a difference. Certain fish, prawns, shrimps…

EVENT: FOODIEMONDAY/BLOGHOP THEME: #145 – CAKES When Preethi who blogs at Preethi’s Cuisine suggested Cakes as the #145th theme for FoodieMonday/Bloghop group I jumped at the suggestion as for quite a while now I have not tried out a new cake recipe. I’ve been baking cakes but the normal eggless one that I bake as people have asked for it. When the suggestion of cake came up, I’m sure no one in our group thought of the forthcoming big Royal Wedding. I baked the cake on Friday evening and added the final touch on Saturday morning, thinking to myself that ‘ok dessert is ready for tonight’. Around lunch time hubby comes home and asked me why I was not watching the wedding. I asked whose and he…

  • 735. Easy Christmas Cake

    December 25, 2017mayurisjikoni

Merry Christmas Everyone This Christmas I’m celebrating it in the Exotic Tropical Island of Bali… yes the Bali where Julia Roberts finds inner peace and balance of love in the movie Eat, Pray and Love. Spending this holiday season with my eldest son, his wife and her parents. The #124th theme Christmas for FoodieMonday/ Bloghop group has come just at the right time. Last week before traveling I baked an Easy Christmas Cake and some Cookies. So for this post was contemplating whether I should post the cake first or the cookies. The cake won and the cookies will be posted a bit later. The last time we spent Christmas with my daughter in law and her parents was in Dubai. Family time together is…

Gingerbread and Oatmeal Bread#BreadBakers Theme: Whole Grained Holiday Breads Whether people would like to admit it or not, December brings about an air of festivities for all. The celebrations begin with ThanksGiving and will end with New Year celebrations. Shops are decorated, Christmas sales are on, friends and relatives share decorated streets, trees, homes photos. One cannot help but get drawn to this seasonal celebration. I consider myself very lucky that I get to enjoy Diwali, Eid and Christmas. As a Hindu living in a predominantly Christian Country and a strong Muslim part of Kenya, I get drawn into celebrating all three festivals. When Kalyani of Sizzling Tastebuds suggested Whole Grained Holiday Breads, I tried looking for recipes where I could use whole grains. There…

  • 702. Peanut Butter and Jelly Pudding

    September 22, 2017mayurisjikoni

MEGA BLOGGING MARATHON -SEPT 2017   #80TH BLOGGING MARATHON   THEME: PROTEIN RICH DISHES DAY:19    When I was planning what protein rich dishes I was going to make, peanut butter was on top of the list. I was planning to make a peanut butter and banana sandwich, but then I came across this delicious pudding recipe. It was also full of chia seeds so one recipe took care of both the protein rich ingredients peanut butter and chia seeds. What I really like about this pudding is that one can even have on days that you are fasting. I know many people fast all 9 days of Navratri without consuming grains, pulses, salt and vegetables. So here’s just the right kind of pudding to energize you and make…

    June 12, 2017mayurisjikoni

Baking is therapeutic I nearly skipped the 96th #FoodieMonday #Bloghop theme Baked as I am just too busy and didn’t have time to bake. Weddings are fun but at the same time stressful. Bangalore traffic makes the tension worse as one has to be on the road nearly 1 hour or more to reach the venue on time. I was feeling sad when Waagmi chose baked as the theme. I so wanted to bake something (I’ve missed the 2 cookies theme!) but knew it was not going to be possible. I thoroughly enjoy baking. I find its so relaxing and fun. If all the ingredients are at hand, then its pretty easy. Baked goodies make great presents for any occasion, a nice treat for picnics,…

  • 575. Date Chai Muffins- #BreadBakers

    July 12, 2016mayurisjikoni

Date and Chai Muffins#BreadBakers Natural Sweeteners While browsing on Facebook one night, I saw a message from Stacy the initiator of Bread Bakers group, requesting members to host the coming months. Quickly, she found hosts for August to December 2016.The only month left was July! For a long time I wanted to host but what put me off was the too technical sounding google documents and htmls and all those alien technological terms. There are files explaining how to go about it, but a mental block was making the whole task sound just too difficult. Knowing that in July I would be spending time with my son in Montreal, I quickly “whatsapped” him asking if he will help to create the document. “Of course mum,”…

  • 565. Mango Coconut Jelly (woon mamuang)

    May 31, 2016mayurisjikoni

Mouthwatering and cooling For the month of May members of Shhh Cooking Secretly decided to use mango as the main ingredient and their partners had to still give 2 secret ingredients that can be used along with mango. So far the photos I seen from fellow members vary from curry, ice cream to pickles. My partner for this month Sharanya Palanisshami of Sara’s Tasty Buds gave me coconut and agar agar as my other two ingredients. Check out her blog. She has a wide variety of recipes ranging from traditional to baked. For a long time I had saved  the recipe Mango Coconut Jelly by Pailin of Hot Thai Kitchen. Finally I made it for this challenge. The jelly turned out well taste wise. It’s a…

  • 499. eggless chocolate banana bundt cake

    April 21, 2015mayurisjikoni

Celebration As I mentioned in my previous post, April is full of birthdays and anniversaries. Last weekend we celebrated my hubby’s mama’s 77th birthday. I baked a cake for his birthday. It had to be eggless as mamaji is a total vegetarian, no eggs or meat or fish. I had loads of over ripe bananas and thought of using them up. Hot weather means bananas do not stay good for too long. I though of using butter icing and then changed my mind as I thought a 77 year old man deserves a more classy cake. He wanted to serve ice cream as dessert so mamiji requested for a cake that could be served with ice cream. I decided to drizzle the cake with some…

Facebook   Everyday I have the radio on while I am working in the kitchen or when I am exercising. East FM  Kenya is one of my best radio stations. The hindi songs vary from the modern to purana geet. What makes the radio station enjoyable is not just the selection of the songs but also the radio jockeys or hosts. This morning while getting breakfast ready Seema and Aleem the morning hosts, were discussing about Facebook. They have a knack of picking very interesting topics for discussions.  I love listening to them.So the discussion was what people use the Facebook for. Some love advertising what they are doing every minute, some love to bombard people with all sorts of quotes and advises. Some use…
