• Black Bean and Corn Salad with Avocado Dressing

    May 16, 2018mayurisjikoni

There was a time when I was sticking to soups and salads only for dinner and that was going pretty well for a long time. However, the disheartening thing was that I was not losing any weight. Light dinners felt good as tummy was not bloated, didn’t feel lethargic and generally felt good that I was eating something healthy. I really should get back to that routine and yes have realized that counting calories is as important as exercising. No diet promises the easy way out. It’s after a long time I’m posting a salad recipe today. A few weeks ago, making salads with greens was not possible as it was difficult getting greens. Now that the rains have begun, its possible to find extra…

Enkare Nyrobi – Cool Water      I’ve been spending some time in the capital city of Kenya, Nairobi. Nairobi gets its name from the Masai phrase Enkare Nyrobi which means cool water. It perhaps was names so as its got the Nairobi River flowing through it. However, the river is no longer what I remembered it as. Its polluted and the flow has reduced due modernization.  I was born and brought up in Nairobi but have been living in Mombasa for the past 35 years. Usually when hubby and I are traveling abroad, we do not bother to come into the city and prefer to catch our connecting flight. The traffic in Nairobi is a nightmare in spite of all the new highways and numerous…

  • 679. Chilli Mojito

    August 17, 2017mayurisjikoni

Refreshingly Chilli Its time to post the Fantastical Food Fight recipe. For the month of August Sarah wanted us to use Rum in our food preparation. When the word Rum is mentioned I think of my favourite Rum and Raisin Cadbury Chocolate. But nowadays its difficult to find it in the supermarkets in Kenya. So what is Rum? Rum is a alcoholic beverage made from sugarcane juice or its byproducts like molasses. The juice or byproducts are fermented and then distilled. The liquid is then aged in oak barrels. I wanted to make some rum and raisin muffins but my hubby and son still don’t want me to make anything sweet. So the next option was a cocktail. Nothing innovative about that but then its…

  • 673.Vegan Mixed Berries Ice Cream

Just the right time to have ice cream    It has been really hot for the past few days in Montreal. Its humid and just the kind of weather all Canadians enjoy. People are out walking, jogging, having picnics, swimming, sailing, lazing in the sun. Hubby and I want to be indoors as the sun is too much for us. My dad is here, his first visit to Canada. He is from London, so he too is enjoying the really sunny hot days. When I run for the shade, he thinks I’m mad. So I had to remind him that I get more than enough sun back home in Mombasa, so I’d rather enjoy the cool or cold weather.    Anyway, its the right theme…

  • 659. Peaches and Cream Oatmeal Cups

    June 22, 2017mayurisjikoni

Peaches and Cream Day Did you know that 21st June is celebrated as the National Peaches and Cream Day in USA? Well, I didn’t know till Sarah Ellis initiator of Fantastical Food Fight suggested that for the June theme we should prepare something with Peaches and Cream theme. It also marks the beginning of the summer solstice. Its more popular in the south as peaches are in season in June in the states of Georgia, Florida, California and South Carolina. How this day came about is unknown. As the name suggests this dessert is very easy to prepare. Its peaches served with whipped fresh cream. The simple dessert is so delicious that I was tempted to just make this simple dessert for the post. What…

  • 647. Cherry Cobbler Parfait

    May 17, 2017mayurisjikoni

Precious Cherries For the month of May, the Fantastical Food Fight theme was Cherry Cobbler. As I read that, I thought here’s another month I’ll have to sit out (last month was BLT and being a vegetarian B was certainly out for me). I asked if I could use glaced cherries and the reply was yes. However, wasn’t feeling too happy about using them. So I waited practically till the last minute still deciding what to make. The charming thing about this group is that you don’t have to participate monthly. Last Saturday I went to the local vegetable shop and I saw a whole big carton of cherries smiling at me. I asked the price and nearly fainted. Cherries are not tropical and so they…

I get tempted to try out so many recipes and the more calories it has the temptation level is that much higher! Recently I joined this group called Fantastical Food Fight.
