People now have a voice and make their opinions known to the public. Kenya went through its elections in Aug and the ruling party Jubilee won. The opposition took the matter to the Supreme Court and it ruled in their favor and so re – election of the President will take place again on Oct 17th (a case of rigging votes).     Where are all the vegetables?       Our Shhh Cooking Secretly group (started by Priya Suresh) decided on #Summer Salads as the theme for the month of April. Summer has come early in India. Here in Kenya we are suppose to have the long rains. However, due to drought conditions, vegetables are scarce and forget about getting exotic herbs, mixed salad leaves and all that. I was partnered with Shobana Vijay of Shoba’s Delights. I gave her pasta and mango to come up with a summer salad.She prepared a mango avocado pasta salad.     aroma therapy   While the bread was baking, the whole house was filled with the aroma of basil. My neighbour smelt basil all the way near the lift of our floor. She came to check what was cooking. Remember in my last post I mentioned that I made some pesto, well I used it to make some delicious bread which I wanted to bake for such a long time. Using biga to make the bread was the other temptation. Using biga makes the bread more flavourful. It gives more strength to weak flour.     creamy and delicious I have lived in Mombasa for the past 30 years and my hubby since childhood. When my kids were young and didn’t have afternoon school, we would spend every afternoon on the beach. Back then we lived pretty near to the beach, third row but the public pathway to the beach passed near our house. 5 minutes walk and we would be on the beach with buckets, spades, towels, goggles, flippers, milk, sandwiches… the works. It was like a ritual till they started afternoon classes. However, the weekends were still spent on the beach till they left Mombasa to go to Kodaikanal to study. My beach trips became less as by then we had moved back into town. Daily routine, jobs etc…
