    Muffins, I love Bananas and chocolate are a classic combination for cakes, muffins, smoothies, cookies etc. These muffins turn out very soft and spongy even though I have not used eggs. Yogurt and fruit puree are excellent replacements for eggs. Most of the muffins I have blogged do not have any frosting on top as usually I prefer to reduce the calorie intake. Feel free to add frosting on yours. updated 03/07/2016 Muffins are very easy to prepare. Its basically all about mixing the dry ingredients to the wet ingredients.     I love strawberries Fresh fruit cupcakes are delicious, soft and fruity. I went to Nairobi last week and came back with loads of fresh sweet strawberries. I had to bake these yummy cup cakes this morning. Ideal for breakfast or tea. I left mine without any decoration but you can serve them with whipped fresh cream or just sieve some icing sugar over the tops.     dark fantasy I had this sudden craving for chocolate. I love eating chocolate and have at least a teeny weeny piece on most days if not everyday. Dark, white or milk, chocolate is chocolate. This time I decided to make some at home instead of buying ready made bars. I have watched Nigella Lawson on cookery shows and love the way she makes cooking look so effortless. Once the ingredients are at hand it is not a chore but a delight. Nigella Lawson has her own style and mannerism which is very endearing. So, I decided to try out her chocolate fudge recipe.     happy birthday Daxa Yesterday was my best friend’s birthday. Usually I bake something to give her as a present as she doesn’t bake much. So obviously this year was no different. So with all the ingredients ready I was on a mission to bake some eggless carrot muffins.I had got the recipe from a blog I can’t remember and was there in the book under the heading ‘try out’. I didn’t scrutinize the recipe, thinking that most are written out well and do turn out pretty good. So while I was mixing and measuring, realised that the batter  was turning out too dry.
