Happy birthday tweenies My twins, Neel and Nami celebrated their birthday yesterday. All my 3 kids are growing up so fast. I remember the parties we use to hold at home and when they were a bit older they wanted parties at a restaurant. Usually we would celebrate their birthdays together, all 3 as the birthdays are  in the same month. Cost saving for me but they probably felt bad sharing the party. Nami and Neel had no choice, they are twins but am sure Niku would have loved a separate party. My tweenies as I call them are poles apart…. one is quiet the other talkative, one is serious, the other very friendly, one is happy with books and play station, the other loves…

happy valentine’s day Valentine’s day has been hyped up over the years. When I was growing up in Kenya, Valentine’s day came and went without anyone really noticing. Instead secret love messages were sent among boyfriends and girlfriends and nothing much. Nowadays a person can receive many love messages, gifts etc but which one is the true one? Isn’t it better to have just one special person to love and care for than so many false relationships?  However, for me its basically just an excuse to indulge in something chocolatey. With a chocoholic daughter and husband I decided to bake some chocolate cookies for Valentine’s day. I don’t have any fancy heart shaped cookie cutters so for now the round ones will do. Perhaps we…

  • breakfast muffins

    February 2, 2013mayurisjikoni

Breakfast is the most important meal of the day. If you’ve had a hearty breakfast then its less likely that you will binge on unhealthy snacks in between meals. Making kids have breakfast is a big task. Sometimes its best to give them some healthy muffins which are loaded with fruits and nuts. The baking bug does not stay away from me for too long. Have been busy baking some of the already blogged recipes. I had this muffin recipe in my book for quite a while and I finally got down to baking them yesterday. Its amazing how quickly one can make muffins once all the ingredients are at hand. The muffins turned out just right…. soft, not too sweet and healthy. Ideal carry…

a chocolate gift instead of a pearl Normally, the saying goes that there are specific things gifted to friends and relatives on their anniversaries, paper for the first, tin for the 10th, pearl for the 30th etc etc etc,  but hardly anyone follows that. My best friend Daxa and her hubby celebrated their 30th just a week before mine and a pearl was definitely not on my shopping list. Instead some home made chocolates was on the list of ‘to do’ since the beginning of January. I didn’t want to send them some muffins or cakes or cookies but wanted to make some chocolates. Though the present reached their home much after the anniversary, I am glad they enjoyed the chocolates.  This particular recipe was…

  • 214. double chocolate brownie cookies

    January 18, 2013mayurisjikoni

so chocolatey I love going through food blogs of other bloggers. Some have amazing photos and some urge me to try out the recipes. One of my favourite blogs is what megan’s making.com. Her bread, dessert and cookie recipes are nice, easy to follow and look yummy. My daughter Namrata is a chocoholic and I decided to try out Megan’s double chocolate brownie bites. We loved the cookies and they are different from the cookies I have blogged so far as the texture is between a cookie and a brownie. I made slight changes to the original recipe to suit our needs. I did not roll them in sugar as I didn’t want sweet cookies. I love the cracked effect on top of the cookies.…

What is are Cookies? Cookies or biscuits are baked flat food made from a combination of flour, sugar and fat. To the basic dough nuts, dried fruits, fresh fruits, fruit purees, chocolate, spices, etc are added to make them more flavorful. Cookies can be soft and buttery, crunchy or chewy. On the other hand savory cookies will contain very little or no sugar, like Khara Biscuits which have green chilis, ginger, curry leaves, coriander and spices.   Baking Cookies In order to make perfect cookies its important to follow the recipe. You cannot eyeball the ratio of flour, sugar and fat. I once made the mistake of miscalculating the amount of butter required and the cookies turned out rock hard. For that nice crunchy and…

for chocolate fans Usually for Diwali, we tend to give some money or a bag of maizemeal to people who work for us directly or indirectly, tirelessly throughout the year. Moving into an apartment means more people to treat…. security people, sweepers, cleaners, vegetable, milk vendors etc etc. Due to popular demand, this year most asked for a cake and nothing else. I baked a huge batch of chocolate muffins. I couldn’t do the frosting as I didn’t have time. The muffins tasted equally good without it. Simple and a hassle free recipe. EGGLESS CHOCOLATE MUFFINS Makes about 12 to 15 1½ cups all purpose flour (plain flour) ¾ cup sugar ¼ cup cocoa powder 1 tsp baking soda (soda bicarbonate) ½ tsp salt 1…

    November 23, 2012mayurisjikoni

happy birthday Meera      My niece, Meera loves baking. Whenever I go her place, we try and bake something together and in the process get to bond as well. She works with a lot of patience and joy. During school holidays she is busy baking goodies for her numerous cousins and large families. I am sure she gets loads of praises from them. Some years back Meera and I baked some eclairs for my dad, her grandfather and we were not too proud of the end result. The eclairs became a bit hard, but got consumed anyway within a few hours. Meera, this time when dada was here I tried out another recipe and they came out perfect. So do try them out again.…

melts in the mouth I love chocolate so any recipe with chocolate catches my eye and I cannot rest in peace till I have tried out the recipe. I tried this recipe out which must have been in my recipe book for eons. After the first time I baked them, I have made many more batches since for friends and relatives and have had a few orders too. I love the fact that in a single bite you can get both the vanilla and chocolate taste or you can choose which part to bite into first, the chocolate or the vanilla. Ok… am getting to the point, don’t be impatient. Today I am going to share with you a recipe for marbled cookies. MARBLE COOKIES…

  • Marble Banana Cake, eggless

    August 22, 2012mayurisjikoni

What is a Marble Cake? When two colored cake batter is put in a cake tin in a random manner and baked it creates a marble effect. Marble Cake in German is called Marmorkuchen and originated in Germany in the 19th Century. Why an Eggless Marble Cake? While I personally prefer cakes with eggs as the texture and softness turns out so different compared to eggless versions, I tend to bake several eggless cakes as most of my family members don’t eat eggs. Baking an eggless cake is not difficult at all. There are several main ingredients that are used to bake an eggless cake. Yogurt: Yogurt adds softness to the cake and when it reacts with a baking agent, it creates tiny bubbles which…
