SHHHH COOKING SECRETLY # 2      I started making my choco coconut bites on Friday and kept them in the fridge so that I could coat them with chocolate the next day. However that was not possible as there was no water! We woke up in the morning to find our taps dry. Everyone came out of their apartments to find out what the problem was. The pump had broken down and it was going to take a while to repair it. How many homes in Mombasa have to store water in jerricans, buckets, huge plastic containers etc. I bet most of us. With the new government and each county having its own governing body, we had high expectations. But unfortunately things just seem…

  • 375. Eggless chocolate crepes with strawberries- SFC #5

    February 24, 2014mayurisjikoni

evil temptation Whenever I would make my signature dish, vegetable crepes, I had to make extra crepes(pronounced as cr+ape) so that the kids could have some dessert too. They loved to spread jam or nutella over the crepes. The Sweet Fantasy Club (started by Preeti of Simply Tadka) challenge for the month of February was eggless chocolate crepe with strawberries. What are crepes? Well they are just like pancakes but much thinner. Its a common street food in France. Creperies sell crepes with all sorts of fillings both sweet and savoury. Crepes can be served in restaurants with coffee or tea. They can be served as an appetizer, main meal or dessert. That’s how versatile crepes are. They can be made from a variety of…

  • 374.Chocolate barfi – SFC # 5

    February 22, 2014mayurisjikoni

double treat The Sweet Fantasy Club’s # 5  challenge (started by Preeti of simply tadka) was chocolate barfi and eggless chocolate crepe with strawberries. The word barfi reminds me of Ranbir Kapoor and Priyanka Chopra. Just can’t help it… loved the movie. Barfi (Murphy) and Jhilmil were just fantastic, innocent and reminded us that basic happiness and laughter in our lives is very important. For eons the recipe for barfi has been gathering dust or rather the page has turned yellow. Its my phobia of making indian sweets. So when the challenge came up, dug out the recipe and made the chocolate barfi. My hubby and I both love chocolate so I made a double chocolate barfi (notice the thick layer of chocolate on top :). Making barfi…

Happy Valentine’s  Day Image courtesy of Ohmega1982 / FreeDigitalPhotos.net       We hear from everyone that we don’t need a special day to remind us that we love someone so dearly, we should feel that way everyday. Now feeling love and nothing else 365 days is a tall order. Be true to yourself and think of how many times you had wished for your own space, you hated your spouse or friend for some reason or the other. There are days when small habits irritate you to no end and its easier to remember the sad and irritating times than the happy times. How many times have you wanted to scream at the top of your lungs and pull your hair (not literally, you…

  • 354.Coffee cinnamon churros – SFC # 4

    January 22, 2014mayurisjikoni

Finally had to use an icing bag!      Our Sweet Fantasy Club #4 challenge for the dessert was churros. When I read the word, I thought, gosh never heard of churros.Research began on the internet. I asked my daughter if she had ever tasted them and she just went yummy and asked “when are you making them?” However, I didn’t get the time to make them in Bangalore. I made them yesterday (totally am losing track of time). The first challenge was handling the icing bag. My son bought it for me from Dubai but I have never bothered to ice cakes or muffins with it. I prefer using an icing tube. My churros is the basic recipe provided by Preeti of Simply Tadka…

EVENT:  FOODIE’S REDOING OLD POSTS #4  My son is getting married in April and the preparations have begun. In a few days I am off to India to shop till I drop! Easy to say that but am pretty tensed as I have so many things to do. In spite of writing all the ‘to do’ things on a list I am just worried that I may forget something. Its at times like this, one does not want to make a mistake in case you hurt someone’s feelings. When I got married, all the preparations and decisions right from the guest list to my wardrobe was decided by my parents and family. These days things are different and the bride and groom have a big…

Happy Teachers’ Day   “A good teacher can inspire hope, ignite the imagination and instill a love of learning”. Brad Henry My love for the English language, Geography and Biology is all because of the wonderful, encouraging and inspiring teachers I have had during my school days. Teachers can either make a child hate or love a subject according to how they treat their pupils. My fear for numbers probably started when I was in the 7th standard and we had a horrible teacher. If you did not understand how to tackle a formula or understand any of the geometry or algebra, she would just shout out stating that she is just wasting her time with brainless kids. Yes she was like a witch for…

scrumptious      My future daughter in law loves cookies. When my son came down for a few days (ok it was a couple of weeks), I sent back a tin full of cookies for her. Normally she doesn’t have any breakfast at home but might rush off to work after having a cookie or two. I baked the first lot and my son gobbled up quite a few within minutes. The remaining cookies were stored away to be packed but he somehow found the tin. I baked another lot, double the recipe this time and he managed to find space in his small bag to take a lot more. I sent some to my best friend to taste as her husband and her are…

Eid Mubarak  I would like to wish all my friends and blog followers Eid Mubarak. May Allah shower you and your family with happiness, peace and prosperity. When I was browsing through Tarla Dalal’s recipes one day, I came across the recipe for akhrot choco tarts and thought that I must try it out one day. I did and it turned out very very sweet in spite of using dark chocolate as the filling. So for this Eid I tried it out again, making quite a few changes and loved the end product. A few days ago I was weighing out the idea of making normal kheer or tarts. Tarts won and I am glad that I did try out the recipe again. Usually failed…

a happy Ramadhan month Ramadhan began a few days ago and most of my Muslim friends fast for the whole month. Its really not easy, but they all say that as the days go by, the fasting becomes easier. I don’t know how they do it, as I cannot stay without water. I truly respect them for the discipline and resilience they go through. Yes, I have done karva chauth but that’s only for a day. To bring a bit of  sweetness into their fasting month, I want to share this yummy recipe. Its very easy to make. It took me hardly 15 minutes or so. Before I left for Nairobi during the weekend, I made paneer from the extra milk. I reckoned that paneer…
