    Healthy Red    Mondays comes just too fast.Imagine we’re already into the second month of the year. In just a month, the other Presidential Election candidate, who lost the second round of election that took place in Nov, was ‘sworn’ in as the ‘People’s President’. In their battle to win the powerful chair, the country is still battling with basic needs. High Food Prices, clean drinking water, better roads, proper sanitation, a cleaner environment to name a few issue needs urgent attention. So many issues to tackle. Mombasa has trash dumped all on roadsides and the hills are going taller by the day. I wish the politicians would for once with dedication just get on with what their tasks are instead of wasting time and useful…

    Caraway is a fruit and not a seed      Our We Knead to bake challenge for the month of March was Kummelweck rolls. Kummelweck, kimmelweck or kümmelweck is topped with salt and caraway seeds which gives it its distinctive flavour. Kümmel in German means caraway, and weck means roll. So simply put these are caraway rolls.  A beef on a weck is a sandwich famous in New York. I am not going  into details about the origin of the rolls as it will be like repeating what is in the wikipedia. These rolls are chewy and crusty from he outside and soft from the inside.   • Vaghareli Bread/Spicy Bread Snack

    Bread can be toasted, buttered, fried, made into so many things…. sandwiches, breadcrumbs, croutons etc. When my brother and sister in law visited us for the first time in Mombasa, my sister in law Arti made vaghareli bread for us as a snack. Vaghareli is the Gujarati word for tempering. Since then I use to make it regularly to put in the snack boxes of my 3 kids. Instead of making a fresh batch every now and then, I improvised on the recipe and made them crunchy so it could be stored in a jar for a few days. You can use  white or brown bread. I don’t cut the crust as it becomes nice and crunchy too. Thank you so much Arti for this…
