• Date Paneer Cheesecake

EVENT: FOODIEMONDAY/BLOGHOP THEME: #246 P FOR PANEER My Paneer Dish : Date  Paneer Cheesecake I must have had the recipe for date and paneer cheesecake jotted down in my recipe book for ages. If I’m not mistaken I must have jotted it down from the Elle Magazine (India Edition) that my daughter kept on buying during her college years. Right now we get the best choice of Dates during Ramadan month and it would be really sad if I didn’t take the opportunity to try out the dessert. Sweet dates were enough to add a little sweetness to the dessert. Most of us are still under lockdowns, stay at home, self isolation, etc etc as times are getting more uncertain as to how the Corona…

  • Fruit and Nut Granola

EVENT: HEALTHY WELLTHY CUISINES THEME: 58 HWCG #NUTTYNUT AT HW The fortnight has just passed so quickly. I feel I just made the paneer chutney sandwich for this group just the other day! We’re back to another theme. This time the theme suggested was Dry Fruits. Then there was a lot of confusion over this term as dry fruits in India is also used for nuts whereas elsewhere in the world nuts are nuts and dry fruits are fruits that are dried.  I was obviously quite confused as there was quite a bit of controversy over it. However, I decided to stick to both nuts and dry fruits. I already had a delicious cookie recipe ready, but my daughter didn’t approve. Not that the cookies…

EVENT:FOODIEMONDAY/BLOGHOP THEME:#172 INTERNATIONAL FEAST When it comes to choosing themes for FoodieMonday/Bloghop, the task can be a little difficult as we try to make it a bit challenging and yet feasible for all, with members living in different parts of the world and availability of ingredients. For quite sometime our themes were more or less based on Indian cooking. So to give that a rest and to make something different this week, I challenged the members to identify a country beginning with the first letter of their name and then cook a dish from that country. By this theme hoping that we’ll get a variety of different dishes from different parts of the world and hence the theme name #InternationalFeast. For me the choices were…

Healthy Red    Mondays comes just too fast.Imagine we’re already into the second month of the year. In just a month, the other Presidential Election candidate, who lost the second round of election that took place in Nov, was ‘sworn’ in as the ‘People’s President’. In their battle to win the powerful chair, the country is still battling with basic needs. High Food Prices, clean drinking water, better roads, proper sanitation, a cleaner environment to name a few issue needs urgent attention. So many issues to tackle. Mombasa has trash dumped all on roadsides and the hills are going taller by the day. I wish the politicians would for once with dedication just get on with what their tasks are instead of wasting time and useful…

Recipe Swap 2       After Dawn paired us up for the January Food Bloggers Recipe Swap, I had every intention of immediately checking out my partner Sarah Schwarz’s blog Cook At Home. However, that did not happen as I was in a holiday mood. When Sarah sent me an email asking me questions to know a bit more about me, I thought I too better get cracking. However, on holiday and no access to a kitchen  I thought I’d go through her blog and decide on what I’d like to make. As I cruise through her blog I see the phrases like Whole 30 and Paleo. Frankly I didn’t know what Whole 30 meant till I googled the phrase. So I knew I would…

MEGA BLOGGING MARATHON -SEPT 2017   #80TH BLOGGING MARATHON   THEME: PROTEIN RICH DISHES DAY:19    When I was planning what protein rich dishes I was going to make, peanut butter was on top of the list. I was planning to make a peanut butter and banana sandwich, but then I came across this delicious pudding recipe. It was also full of chia seeds so one recipe took care of both the protein rich ingredients peanut butter and chia seeds. What I really like about this pudding is that one can even have on days that you are fasting. I know many people fast all 9 days of Navratri without consuming grains, pulses, salt and vegetables. So here’s just the right kind of pudding to energize you and make…

MEGA BLOGGING MARATHON -SEPT 2017 #80TH BLOGGING MARATHON THEME: PROTEIN RICH DISHES DAY:2 When we were growing up, my dad would insist that we must have a glass milk and a banana before we left for school. I think this continued till I went to a boarding school. Usually we would not want to eat anything in the morning but my mum would be like a strict General in the Army, with her hands on her hips and would not budge till we drank the milk and ate the banana. My sister would hide the glass of milk in the netted cupboard when she would notice that my mum’s attention is on my brother or me. Remember in the olden days when a simple wood…

  • Vegan Mixed Berries Ice Cream

    July 19, 2017mayurisjikoni

Fantastical Food Fight This group, Fantastical Food Fight managed by Sarah Ellis, is where bloggers create a recipe according to the monthly theme. This month the theme is Ice Creams and rightly so as its summer. Summer and Ice Creams go hand in hand. Summer in Montreal – Memory It has been really hot for the past few days in Montreal. Humid and sunny, just the kind of weather Canadians enjoy after the long winter months. People walking, jogging, swimming, sailing, lazing in the sun, enjoying picnics. My dad is here from London, and he too is enjoying the bright sunny days. What a change for him from the grey, windy weather in UK. As for me I prefer to walk in the shade, sit…

  • 648. Chocolate Avocado Pudding

    May 22, 2017mayurisjikoni

A big green berry Yes you read the title correct. Botanically speaking an avocado is a berry and thus classified as a fruit. It is a single berry fruit. There is much confusion as to whether it is a summer fruit or spring and nowadays its available in winter too. However, in Kenya where we don’t really have our climate divided into 3 or 4 seasons like winter, spring, summer and autumn, avocados are available mostly throughout the year. Some countries classify it as a summer fruit. So as far as I’m concerned summer fruit or not I decided to use it for our 93rd theme on FoodieMonday Bloghop group. The theme is Summer Fruits suggested by our group member Pushpita. It certainly isn’t hot…

  • 631. Pina Colada Overnight Oats

    April 3, 2017mayurisjikoni

Sea, sand and Pina Colada      Ok, its not the drink Pina Colada that I’m going to blog about. However, the name Pina Colada makes one think of sunny sandy beaches, blue seas and lazing on the sunbed with a Pina Colada to keep you cool.       The #FoodieMonday #Bloghop group decided on #Coconutmilk as the #86th theme. I was happy as I could just think of pina colada muffins (which has been on my ‘to do’ list for ages). However, hubby dear dashed all my hopes of baking muffins as he just said pretty adamantly ‘no baking muffins in this house, there’s been too many muffins.’ Truthfully, haven’t blogged a new muffin recipe in a long time, but how do I explain…
