In just a month, the other Presidential Election candidate, who lost the second round of election that took place in Nov, was ‘sworn’ in as the ‘People’s President’. In their battle to win the powerful chair, the country is still battling with basic needs. High Food Prices, clean drinking water, better roads, proper sanitation, a cleaner environment to name a few issue needs urgent attention. So many issues to tackle. Mombasa has trash dumped all on roadsides and the hills are going taller by the day.     A big green berry Yes you read the title correct. Botanically speaking an avocado is a berry and thus classified as a fruit. It is a single berry fruit. There is much confusion as to whether it is a summer fruit or spring and nowadays its available in winter too. However, in Kenya where we don’t really have our climate divided into 3 or 4 seasons like winter, spring, summer and autumn, avocados are available mostly throughout the year.     magic fruit    Who would have ever thought that banana can be used along with yeast to make a delicious bread? I didn’t…. till Aparna of  ‘We Knead to Bake’ challenged us to bake one for September. I thought “that’s going to be a sweet bread, so how come its a sandwich bread?” However, the bread was not sweet and besides the slight banana taste, its like any normal bread but with a soft inside and crispy crust. As soon as the loaf came out of the oven, I wanted to slice it straight away because of the delicious aroma. However, had to resist the urge but after 20 minutes just had to slice it.     SHHHH COOKING SECRETLY # 2      I started making my choco coconut bites on Friday and kept them in the fridge so that I could coat them with chocolate the next day. However that was not possible as there was no water! We woke up in the morning to find our taps dry. Everyone came out of their apartments to find out what the problem was. The pump had broken down and it was going to take a while to repair it. How many homes in Mombasa have to store water in jerricans, buckets, huge plastic containers etc. I bet most of us.     hold that sugar! We all know that sugar is not good for our health but how often do we get attracted to sweet things… sweet drinks, cakes, muffins, cookies, indian sweets. It is so difficult to resist the very things that are bad for our health. I have tried substituting sugar with the artificial sweeteners but can’t stand the bitter after taste. And then all this confusion about artificial sweeteners not being good for us.There is a lot of rave about stevia, but have not used it as such.
