    Baking is therapeutic I nearly skipped the 96th #FoodieMonday #Bloghop theme Baked as I am just too busy and didn’t have time to bake. Weddings are fun but at the same time stressful. Bangalore traffic makes the tension worse as one has to be on the road nearly 1 hour or more to reach the venue on time. I was feeling sad when Waagmi chose baked as the theme.     Leave the innocent children alone Time and again we are facing with news and reports of cruelty towards innocent children. Forced labour, ill treatment, child trafficking, children soldiers and now the shootout at Peshawar. A few days ago a video went viral online showing a Ugandan maid force feeding a toddler, and when the poor child vomited, the maid kicked the child like a football, stepped on the fragile being and basically just went mad. The child is fine and the maid has got a jail sentence. All this was caught on camera which the maid probably had no idea that the parents had installed in their house.     tropical taste Coconut is such a versatile fruit. Bake with it, add it in rice, curries, decorate with it. So many ways to use it. I love the taste of coconut combined with a tropical fruit. I hadn’t baked muffins in a while, and yesterday managed to bake some. This time round, I decided to combine coconut and passion fruit. I use the sour passion fruit to make juice, add to desserts or add to a fruit salad. I had a few passion fruits left over and decided to use them up in the muffins.The muffins taste really good… tropical flavour.
